This crockpot balsamic chicken is a SUPER simple and easy recipe to make. Tender chicken in an Italian balsamic vinegar sauce with onion and tomatoes. You won't believe how good this is - and it's really just a dump and go recipe. Bonus: it's also a low carb and keto crockpot chicken recipe too!

Simple and Easy To Make

Literally super easy to make and tastes SO delicious! It's really a dump and go recipe. I love that I was able to just use the ingredients I already had in the pantry/freezer to make this recipe - no extra trip to the store! I also got to use some of the canned tomatoes from last Summer's garden. 🙂 

Low Carb and Keto Crockpot Chicken

This is a perfect low carb recipe and works perfectly if you're following a keto diet. With only 7.1 g net carbs you are gonna love this!

You can increase fat content even further by using chicken thighs and by increasing olive oil or using butter. Topping with parmesan cheese works well also.

Ingredients needed for making Crockpot Balsamic Chicken

Here are the ingredients you'll need to make this Balsamic Chicken Crock Pot Recipe:

  • Onion
  • Boneless Skinless Chicken Breasts or Thighs
  • Extra Virgin Olive Oil - you can also use avocado oil
  • Kosher Salt
  • Ground Black Pepper
  • Italian Seasoning
  • Garlic
  • Balsamic Vinegar
  • Canned Diced Tomatoes
  • Optional Thickener - Flour or Cornstarch (low carb: ½ teaspoon xanthan gum dissolved in ½ teaspoon olive oil)

How To Make Slow Cooker Balsamic Chicken

Here's how to make this balsamic chicken crock pot recipe. It's so easy you won't believe it. 🙂

Layer Ingredients

Spray the inside of the crockpot with nonstick spray.

Add onions to the crockpot first, then chicken breasts, olive oil, salt, pepper, Italian seasoning, balsamic vinegar, and then end with tomatoes.

Slow Cook

Cover, cook on LOW for 4 to 6 hours or until chicken is done. Note: chicken breasts will dry out much faster than thighs so make sure to check on them!

Thicken Sauce

Remove the chicken, cover with foil, and set aside.

Optional Thicken Sauce

In a small bowl, mix together 1 tablespoon of cornstarch with an equal part of cold water or ¼ teaspoon of xanthan gum dissolved in 1 teaspoon olive oil until dissolved.

Mix the dissolved thickener into the crockpot juices and continue to cook on low for a few minutes until the sauce starts to thicken.

Serve

Serve and enjoy! This is delicious served over riced cauliflower, pasta, or mashed potatoes. If desired, garnish with a little parmesan cheese and fresh herbs.

Kori's Tips

  • Thinly slice your onions and lay them on the bottom of the slow cooker. Then, follow with the chicken and the rest of the ingredients.
  • Some balsamic vinegar brands are sweeter than others. If your balsamic is more acidic, add a little bit (1 to 2 teaspoons to start) of brown sugar after cooking. Adjust to your liking.
  • Chicken thighs are moister meat because they have a higher fat content. Thighs would be great if you have to cook your chicken for longer than 4 hours. 
  • The sauce can be thickened with cornstarch, flour, or xanthan gum (low carb). Served over the chicken it is quite delicious!
  • Meal idea! Serve over steamed rice cauliflower, or standard rice, and a side of steamed broccoli.

Crockpot Balsamic Chicken is a super simple recipe to make. Tender chicken in an Italian balsamic vinegar sauce with onion and tomatoes. Ingredients
  

  • 1 small onion thinly sliced (if not following a low carb diet, use 1 large onion)
  • 5 to 6 boneless skinless chicken thighs or breasts
  • 2 tablespoons olive oil (butter or avocado oil also work well)
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 2 tablespoon Italian seasoning
  • 2 teaspoon garlic (minced)
  • ⅓ cup balsamic vinegar (can use up to ½ cup)
  • 2 (14-ounce) ounce cans of diced tomatoes
  • Optional low carb thickener: ½ teaspoon xanthan gum mixed with ½ teaspoon olive oil

Instructions
 

  • Spray the crockpot with nonstick spray. Add onions first, then chicken breasts, olive oil, salt, pepper, Italian seasoning, balsamic vinegar, and then tomatoes.
  • Cover and cook on LOW for 4 hours or until chicken is done. Season with additional salt and pepper as needed.

Kori's Tips

  • Thinly slice your onion and lay in the bottom of the crockpot first to help them cook faster.
  • Chicken breasts are naturally dryer than chicken thighs, if you need to cook your chicken longer than 4 hours, use thighs.
  • Some balsamic vinegar are more acidic than others. To offset acidity add brown sugar to taste, starting with 1 tablespoon. (low carb/keto use a brown sugar substitute)
  • This is really good served with riced cauliflower or standard rice.
  • If the sauce is too runny for your liking, it can be thickened with a slurry of 1 tablespoon of cornstarch whisked together with 2 tablespoons of cold water, or (low carb) ½ teaspoon of xanthan gum dissolved in 1 teaspoon of olive oil. Remove the chicken and keep warm. Turn the crockpot on high, whisk the slurry into the pot juices, let thicken with the lid off for about 15 minutes. Even quicker - transfer the pot juices to a saucepan and whisk in the slurry. Simmer, whisking frequenly until sauce is at the desired thickness.

    Can you use frozen chicken breasts right out of the freezer or will they need to be thawed first?

    Is that 2 tsp of fresh diced garlic? I see it in the ingredients but not the instructions.
