Low Carb and Keto Thai Recipe

This is a great low carb and keto dinner option! Not only is it simple to make and tastes great, but it is healthy too! Serve with the coconut cauliflower rice to add more fat. You can also add 1 additional tablespoon of coconut oil.

Crock Pot Thai Basil Chicken Ingredients

Here's what you'll need to make this spicy Thai basil chicken recipe:

  • Boneless Skinless Chicken Thighs
  • Frozen Green Beans
  • Coconut Oil
  • Dried Bail
  • Serrano Pepper
  • Red Bell Pepper
  • Thai seasoning
  • Salt and Pepper
  • ½ teaspoon xanthan gum (optional low carb thickener, mixed with ½ teaspoon oil before adding) or 1 tablespoon cornstarch dissolved in 2 tablespoons cold water.
  • Lime
  • Fresh Basil

How To Make Slow Cooker Thai Chicken

  1. Place chicken thighs in the slow cooker.
  2. Add green beans, coconut oil, basil, hot pepper, bell pepper, add Thai seasoning.
  3. Turn crockpot on low and cook 6 to 8 hours or until chicken is done.
  4. Season with salt and pepper, and a squeeze of lime. Garnish with fresh basil, if desired. Serve the Spicy Thai Basil Chicken over coconut cauliflower rice - a perfect pairing!

Tip: at the end of cooking, you can thicken the sauce by mixing xanthan gum and a small amount of olive oil together. Add to the slow cooker and stir. Let sit until sauce thickens slightly.

How To Serve

My favorite way to serve spicy Thai basil chicken is over coconut rice. However, because I am following a low carb diet I make Coconut Rice Cauliflower! It is so delicious and good that you will not miss the rice at all. I promise. Recipe: Coconut Cauliflower Rice

Spicy Thai Basil Chicken Recipe (Thai Chicken Slow Cooker)

Ingredients
  

  • 2 pounds boneless skinless chicken thighs
  • 1 pound green beans (fresh or frozen)
  • 2 tablespoon coconut oil
  • 1 tablespoon dried basil
  • 1 tablespoon serrano pepper (or more to taste, jalapeno is fine too!)
  • 1 red bell pepper
  • 2 teaspoons Thai seasoning
  • 1½ teaspoon salt (or more to taste)
  • pepper to taste
  • Optional thickener: ½ teaspoon xanthan gum dissolved in ½ teaspoon olive oil or 1 tablespoon cornstarch dissolved in 1 to 2 tablespoons of cold water
  • lime
  • fresh basil to garnish (optional)
  • Coconut Cauliflower Rice (keto cauliflower rice)

Instructions
 

  • Place chicken thighs in the slow cooker, add green beans, coconut oil, basil, hot pepper, bell pepper, add Thai seasoning.
  • Turn crockpot on low and cook 6 to 8 hours or until chicken is done.
  • If desired, juices can be thickened into a sauce by dissolving cornstarch in water or xanthan gum in olive oil.
  • Season with salt and pepper, and a squeeze of lime. Garnish with fresh basil, if desired.

    Hi there don’t seem to be any ingredients that would make a sauce, the only liquid is a tablespoon of coconut oil, could you please let me know how it makes a sauce thank you

      HellO! No additional liquid is needed, the chicken and vegetables cook in their juices. You can add 1/2 tsp xanthan gum (the low carb option) dissolved in 1/2 tsp olive oil or 2 tsp of cornstarch dissolved in 2 tsp of water. Stir it into the pot and allow it to thicken.
