Sorry, Kraft. I used to love your Shake 'n Bake mixes as I was always able to bake extra juicy chicken and pork chops. Now I need something low carb, sugar-free, ketogenic, and with no added chemicals or any unnatural ingredients! Since something like that isn't available I decided to make my own! 🙂

Here's what you will need to make copycat shake and bake! This is a low carb and keto shake and bake version. The results are very moist chicken and pork with a delicious crispy coating. You'll love it!
Ingredients
- pork rind panko (this is the exact brand I use, and I buy it in this size which is a large bag - perfect for this recipe)
- almond flour
- kosher salt
- celery salt
- paprika
- pepper
- garlic powder
- garlic salt
- minced dried onions
- dried parsley
- dried oregano
- dried basil
Tools
- airtight container or a large jar (if you're making extra for later! I like to double or triple the recipe)
- mixing bowl
- gallon plastic bag
- measuring spoons
- measuring cups
How to make Gluten Free Shake and Bake
- In a bowl mix all ingredients and transfer to an airtight container if storing for later. 1 recipe is approximately equivalent to 2 packages of Shake and Bake seasoning.
How to use Homemade Shake n Bake
- Preheat oven to 400 degrees F. Transfer half of copycat shake and bake mixture to a gallon-sized plastic bag or a bowl. This recipe will use 2 to 2-1/2 pounds of bone-in or boneless chicken or pork pieces.
- Rinse chicken or pork pieces in water and place one piece at a time in a plastic bag. Shake bag until each piece is coated and then place on a foil or parchment-lined baking sheet. Continue until all pieces are covered, throw away an excess copycat shake 'n bake left in the bag.
- Bake bone-in chicken pieces for 45 mins, boneless chicken 20 to 25 minutes. Bake bone-in or boneless pork chops for 20 minutes (1/2" thick pieces). The temperature of the chicken should reach 165 degrees F and pork 145 degrees F.

Store your homemade shake n bake in an airtight container in a cool dry pantry for 6 months.

Place the chicken on a rack instead of directly in the pan.
I always lightly spray my pan with cooking spray before cooking chicken just to help prevent sticking. The sticking is minimal so you don’t really need to grease the pan.
No bread crumbs are different. Regular bread crumbs do not have any seasoning, whereas shake and bake is a fully seasoned coating mix ready to bake with your chicken or bake.

I am so glad I found this recipe, love the ingredients too and we always buy pork rinds anyway! I didn't have 2 of the ingredients so I improvised except for the celery salt. It is better then Shake n' Bake! Can't wait to make it again! I am also going to try it with chicken, just have to buy a lot more pork rinds.....ALDI's has the best ones.

Made this with a bag of Aldi barbecue pork rinds that I had on hand. Chopped them up in the food processor which yielded a little over a cup of "panko". I used all the other ingredients in the recipe, adjusting them by half. The end result was really excellent. They tasted exactly like the real thing, and I'm very picky.

Can you gluten free flour instead of almond flour and, can you use gluten free panko bread crumbs instead of pork rine bread crumbs?

I have never actually made it this way, but I think it would work well! I would add about 1/8 cup of olive oil to the mixture if you are not using pork panko (crushed pork rinds). It will add the needed fat and will help the pork/poultry retain moisture and get more of the crustiness. Let me know how it turns out and I can add that to the post! 🙂

I am going to try this tonight with my pork chops. I cook for 2 now and will need to store what I do not use. However, being that the pork panko has oil in it, would it be better to store in the freezer or a cool place so the oil doesn't go rancid? Thanks and look forward to trying this.

Hope you enjoy it! I really do keep a jar of this on hand all the time. I use it on a lot of things - as a casserole topping, over fish, poultry (even our Thanksgiving turkey! 🙂 I store it in an airtight container for up to 9 months (although it never lasts that long). You can freeze it for up to 2 or 3 months if it's store in airtight containers or freezer bags. Enjoy and have a good day!

I also use this with simply adding some crushed nuts or nut crumbs to it for extra flavor and baking/browning help. I have also lightly brushed the chops prior shaking in mixture with mayo & dijon mustard mixture first, that helps the crumbs stick better and the mixture to finish better due to oils. Great way to change up the flavor to chicken or pork. Love this recipe. I may try it on some veggies and then air fry.
