What To Make For Mother's Day

Figuring out what to make for Mother's Day has always been a challenge for me! Probably because I am the Mom and we don't want to cook our own breakfast on Mother's Day, right? 🙂 

I have found that 2 options work well for me - have a brunch and make a meal for other Mom's (family and friends), OR have on hand ingredients for a simple breakfast for your hubby and kids to make. Breakfast in bed is something that my boys and hubby have done for me for years. They are so sweet! 🙂 Thanks guys! 🙂

The recipes in this roundup are simple, and most can be made ahead of time. The frittatas cannot be made ahead but they are a one-pan dish and so easy!

What you serve does depend on the time of day. If it's breakfast in bed it's probably going to be breakfast food. If it's a brunch, lunch, or early dinner you can get away with a full meal.

Just pick and choose your favorite recipes from below (keep scrolling) to easily create the perfect Mother's Day menu that everyone will love - even those not following a low carb or keto diet! Remember, keep it simple. Here's my formula:

Appetizer + Main Dish (1) + Side Dishes ( 1 or 2) + Dessert (1 ) = The Best Mother's Day Brunch

My Keto Mother's Day menu this year will be:

  • shrimp dip
  • Eggs Benedict Frittata with Hollandaise
  • Layered Side Salad
  • Lemon Meringue Custard Pies

Party planning tip - accommodate ALL diets! A fruit and veggie platter is always nice for people eating light and whole foods. 

Breakfast In Bed:

  • Easy breakfast sandwich (keto toast (recipe below) + brown sugar bourbon ham + egg + cheese). Serve with Mom's favorite drink, coffee, or tea.
  • Coconut blueberry muffin + herb and cheese scrambled eggs
  • Simple bacon and eggs + keto toast
  • Keto toast + Hawaiian chicken salad + chocolate torte 

Brunch, Lunch, or Dinner:

  • Shrimp dip + smoked salmon frittata + layered salad + almond butter cake 
  • Brown sugar bourbon ham + layered salad + lemon meringue custard pies
  • Ham rollups + eggs benedict frittata + cauliflower mac and cheese + brownies
