- Master's Degree in Accounting
A Passion For Cooking
Cooking has always been my real passion. I’ve always loved cooking, and I believe I inherited all my cooking skills from my mother, grandmother, and aunts—the best cooks ever!
- I worked in several restaurants and did catering throughout high school and college, which provided me with valuable technical cooking knowledge.
- In 2019 I decided to leave my accounting career and pursue the food blog full-time. With the combination of business and restaurant/catering experience, I felt prepared to run a successful web business all my own!
- In early 2023, I started a sister food site called Slow Cooked Eats, focusing on easy-to-make, delicious crock pot recipes for busy families. This is how I fed my family while working full-time outside the house for years.
- I took that passion to a new level and enrolled in culinary school to become a professional chef - specifically focusing on holistic wellness and nutrition.
Eating Healthy is Hard For Me
Healthy eating is hard for me, and I have always struggled with my weight. I am a total foodie. I love cooking it, and I love sampling new things. I've always found food to be a comfort (which isn't a good thing when life gets stressful, right?).
As I have moved into my 50s, the full impact of my love of food—and not-so-healthy eating habits—caught up to me, severely impacting my health.
Because of this health scare, I have committed to a lifelong transformational journey, focusing on healthy eating AND fitness. These two things go together - there are no shortcuts - you simply must incorporate both activity and healthy food.
The right foods and movement are medicine. -Kori
Family and Farm Life
When I’m not busy blogging, I love hanging out with my family (husband and 3 sons) and 3 dogs. They make me feel so blessed.
I also love puttering around our small farm either in the garden or out in the field with our 3 donkeys, 2 goats, and 6 chickens. Yep. For real.
Travel Travel...and More Travel
When I’m not at home, we are usually traveling. Our family does A LOT of traveling both internationally and within the US.
When traveling the US you will find us in our RV. As a matter of fact, we love the RV Life so much that my husband and I recently started a sister site, Seeking The RV Life, so we could share our passion with other RVers! Check it out sometime!
About Seeking Good Eats
The Beginning
Seeking Good Eats was started in 2018 because I wanted to share my love of cooking as well as my mass accumulation of recipes from over the years of cooking for family and friends!
My Audience
Today, Seeking Good Eats is a space dedicated to easy healthy recipes (mostly low carb, gluten-free, sugar-free, and keto recipes) that you’ll want to make time and time again!
My recipes are made with busy families in mind, especially those with mixed dietary needs. Most of my recipes are flexible enough that your whole family can enjoy them.
My Recipes
My recipes are mostly (but not always):
- Easy to Make Healthy Recipes
- Low Carb
- Sugar-Free or No Sugar Added
- Gluten-Free
- Preservative Free
- Keto-Friendly
- 10 ingredients or less
- 30 minutes or less
- Dairy-Free
- Vegetarian or Vegan Recipes
- Paleo-Inspired
- Whole 30
Sometimes you will see me call for an ingredient that isn't preservative-free or a "whole" food (like canned soup, miscellaneous sauces, or seasonings). I do this purely as a timesaver; however, I try hard to have a homemade preservative-free recipe option that you can make as an alternative (cream of mushroom soup, barbecue sauce, taco seasoning, copycat shake and bake seasoning, etc.).
Every once in a blue moon, I will publish a recipe that you might be totally unfamiliar with or might appear to be more complicated than you're used to. We encourage you to get out of your comfort zone and try something new! It's fun to experiment with new recipes. When you have some free time on the weekends, challenge yourself with a fun and interesting new recipe. 🙂
