I'm a culinary school-trained chef specializing in holistic wellness and nutrition, but my path wasn’t traditional! Before pursuing food full-time, I spent 20+ years as an accountant and CFO—a unique blend of business and culinary expertise that helps me run a successful food-focused brand.

From Kitchen to Business: A Chef’s Journey
My love for cooking started early—I worked in restaurants and catering throughout high school and college, gaining valuable hands-on experience and technical skills in the kitchen.
After years in accounting, I took a leap in 2018 and turned my passion into a full-time food blog. With my background in both business and the food industry, I felt ready to build a successful online brand.
To take my expertise even further, I pursued formal culinary training, specializing in holistic wellness and nutrition. Now, I combine my love of food, technical skills, and business experience to help others make healthy, approachable meals that fit real life.
In early 2023, I expanded my reach by launching Slow Cooked Eats, a site dedicated to easy, delicious crockpot recipes—exactly how I kept my own family well-fed while working full-time.
Finding Balance, Not Perfection
Healthy eating has always been a challenge for me—I’m a total foodie. I love cooking and trying new flavors, and honestly, food has always been a source of comfort (which isn’t exactly helpful when life gets stressful, right?).
But as I've moved into my 50s, my love of food—paired with less-than-healthy habits—caught up to me, taking a serious toll on my health. It was a wake-up call for sure.
Now, I’m on a lifelong journey to find balance—not perfection. I’ve learned that healthy eating and movement go hand in hand—there are no shortcuts. Food should nourish, movement should energize, and both should be something we enjoy.
Because at the end of the day, the right foods and staying active truly are the best medicine.

Empty Nest, Full Life
When I’m not busy blogging, I love spending time with my husband and our two dogs. As our nest has emptied, we’ve embraced new adventures, from traveling to hobbies and volunteer work that keep life exciting. Life may look different these days, but it’s never dull!
Wanderlust and RV Adventures
When I'm not in the kitchen, you'll usually find me on the road! Our family loves to travel—whether it's exploring new countries or road-tripping across the U.S. in our RV.

I started Seeking Good Eats in 2018 to share my love of cooking and my ever-growing collection of recipes—gathered from years of cooking for family and friends
My Audience
As a classically trained chef, I bring my culinary expertise to Seeking Good Eats, creating easy, healthy recipes you'll want to make again and again!
I design my recipes with busy, health-conscious households in mind—especially those managing different dietary needs. Most of my dishes are flexible, so everyone at the table can enjoy them.
My Recipes
My recipes are mostly (but not always) flexitarian and plant-forward, with a focus on making healthy eating easy and adaptable for different dietary needs. I love creating meals that are simple, delicious, and work for a variety of lifestyles, including:
- Quick and easy healthy flexitarian recipes
- Plant-forward, vegetarian, and vegan options
- Low-carb dishes
- Sugar-free or no-sugar-added meals
- Gluten-free recipes
- Minimally processed, whole-food ingredients
- 10 ingredients or less
- Ready in 30 minutes or less
- Dairy-free alternatives
I believe eating well should be simple, satisfying, and work for everyone at the table!
Notes:
- Sometimes you will see me call for an ingredient that isn't preservative-free or a "whole" food (like canned soup, miscellaneous sauces, or seasonings). I do this purely as a timesaver; however, I try hard to have a homemade preservative-free recipe option that you can make as an alternative (condensed cream of mushroom soup, barbecue sauce, taco seasoning, copycat shake and bake seasoning, etc.).
- Every now and then, I’ll share a recipe that might be unfamiliar or seem a bit more complex than you're used to (like these delicious plant-based date oatmeal scones). I encourage you to step outside your comfort zone and give it a try! Cooking is all about experimenting and having fun—so when you have some free time on the weekend, challenge yourself with something new and exciting in the kitchen! 🙂
