- 4 ounces diced green chilies, do not drain

- Additional salt and pepper to taste
Instructions
- Heat oil in a large skillet on medium-high heat. Add chicken and cook until chicken is done, frequently stirring for approximately 5 to 6 minutes. (chicken is done when it is no longer pink, or to be 100% sure, use an instant-read thermometer. Chicken is done at 165 degrees F.)
- Add seasoning mix, beans, green chilies, and chicken broth. Stir and then bring to a boil. Cover, turn down the heat, and simmer the chili for 15 minutes.
- Serve and garnish with cheese, avocado, sour cream and cilantro.

- Always use the freshest dried herbs for the best results.
- If you like your chili on the spicy side, use ½ teaspoon - or more of cayenne pepper.
- If you can't find green chili powder, you can omit it.

Hi Starr! Great question. For each batch of chili, I recommend using about 2 to 2½ tablespoons of the seasoning mix. You can always adjust slightly based on how bold you like the flavor. Making a big batch ahead of time is such a smart move!

The green chile powder is no longer available, but the seasoning didn't really need it. I made my chicken chili with 4 C chicken stock, 1 40 oz can pinto beans, 1 32 oz chili beans, the seasoning, and about 2 C shredded rotisserie chicken (my intention was to use leftovers from a store-bought chicken), and topped it with sour cream, chopped onions, and shredded pepper jack. I used only 1/4 t cayenne and at first I wish I hadn't, but the finished chili was satisfactorily spicy without being uncomfortably so. My oregano was dried leaves and my onion powder was clumped, so I blended the entire batch of seasoning in my spice grinder and it came out a very nice texture and blended in the broth quite well. The seasoning recipe is definitely a keeper.
