To make easy white chicken chili (optional)
Heat oil in a large skillet on medium-high heat. Add chicken and cook until chicken is done, stirring frequently for approximately 5 to 6 minutes. (chicken is done when it is no longer pink, or to be 100% sure use an instant-read thermometer. Chicken is done at 165 degrees F.)
Add seasoning mix, beans, green chilies, and chicken broth. Stir and then bring to a boil. Cover, turn down the heat, and simmer the chili for 15 minutes.
Serve and garnish with cheese, avocado, sour cream and cilantro.

Kori's Tips
For more helpful hints, substitution ideas, cooking tips, and other delicious recipes check out my post above.TIPS: Always use fresh dried spices for the best flavor. This seasoning equals one store-bought packet, so it’s perfect for a single batch of chili. If you like extra spice, bump up the cayenne.VARIATIONS: Can’t find green chili powder? Omit it or use mild white chili powder instead. Prefer a thicker chili? Keep the thickener in, or just simmer your chili longer uncovered until it reaches your favorite consistency.SERVING SUGGESTIONS: Use this white chicken chili seasoning in any white chili recipe—it pairs beautifully with chicken, turkey, or even plant-based protein. Top your chili with avocado, cilantro, cheese, or a swirl of Greek yogurt for a cozy, healthy dinner.
