Recipe backstory.

I’ve always had a soft spot for pizza—it’s one of those comfort foods I could eat any day of the week. But when the temps drop and I’m bundled up inside, I find myself craving something warm and spoonable. On one especially cold winter day, I had a serious pizza craving but didn’t want the heaviness that comes with a thick, doughy crust. So I grabbed what I had in the fridge and turned those classic pizza flavors into soup.

The result? All the cheesy, saucy, savory goodness I love, but in a cozy, low-carb bowl I could curl up with. It’s hearty without feeling too heavy, and it’s flexible enough to make again and again with different toppings or add-ins. Now it’s my favorite way to satisfy that pizza craving when I want something warm, nourishing, and still a little indulgent.

  • Green bell pepper – or any color you have on hand

  • Mushrooms – white button or baby bella are great choices
  • Pizza sauce – use a sugar-free version to keep it low carb
  • Canned diced tomatoes – regular or petite dice both work
  • Mini pepperoni – or use chopped, turkey, or plant-based versions
  • Chicken broth – or swap for vegetable or beef broth
  • Cream cheese – softened so it melts easily into the soup
  • Half and half – or use heavy cream for a richer texture

Follow these simple steps for making the best pizza soup!

Preheat a stock pot with olive oil over medium heat and saute your bell pepper, onion, and mushrooms until tender.

Simmer 25 minutes then add dairy items. Season to taste with salt and pepper.

  • Use very soft, even warm cream cheese, and use a whisk when adding cream cheese to avoid clumps.
  • Keep the pot covered while simmering to retain moisture.

How many carbs are in pizza soup?

The nice thing about pizza soup is that it contains everything you love about pizza in soup form (without the crust), which makes it much healthier. The carb content varies from one recipe to the next, but this one contains 8 net carbohydrates and can be adjusted up or down with a modification of ingredients.

How do I reheat it?

Microwave - transfer pizza soup to a microwave-safe bowl and heat on low setting until warm, about 2 minutes cook time.
Stovetop - warm gently over medium-low heat, stirring occasionally until warmed through.

What is the best way to store it?

Cool the soup then transfer it to an airtight container. Store in the refrigerator for up to 4 days. You can also freeze it - see the instructions below.

Ingredients
  

  • ½ pound italian sausage (cooked and crumbled)
  • 1 tablespoon olive oil
  • 1 cup diced green bell pepper
  • 1 cup onion
  • 4 ounces sliced mushrooms
  • 24 ounces chicken broth
  • 6 ounces pizza sauce
  • 1 (14.5-ounce) can diced tomatoes
  • ½ cup pepperoni minis (or diced pepperoni)
  • 4 ounces cream cheese (softened)
  • 8 ounces half and half (or heavy cream)
  • 1 cup mozzarella cheese (shredded)

Instructions
 

  • Preheat a stock pot with olive oil over medium heat and saute bell pepper, onion, and mushrooms until tender.
  • Add in the Italian sauce, chicken broth, pizza sauce, diced tomatoes, and pepperoni. Cover and reduce heat to simmer for 15 to 20 minutes.
  • Add softened (very soft) cream cheese and stir until melted, then add half and half. Salt and pepper to taste.
  • Ladle into soup bowls. Top with mozzarella cheese and garnish as desired. Serve.
