Four Ingredients

Only 4 ingredients in this ribeye steak recipe! Olive oil, salt, pepper, and steak. You can certainly add herbs, and garlic, or even use a marinade when you prepare your steaks.

There are 2 key steps that will ensure delicious steak. Season the steak and refrigerate 12 to 24 hours before grilling and allow it to come to room temperature before grilling. Use a meat thermometer to test doneness and remove your steaks 5 degrees lower than final temperature (see below).

Not many ingredients or steps to grilling delicious tasty steaks. All the action happens when you grill and in a few short minutes, you'll have a perfect juicy grilled ribeye steak!

  • Olive Oil
  • Kosher Salt

The Best Way to Cook a Ribeye

1. Brush both sides of each steak with olive oil and generously sprinkle both sides with kosher salt and ground black pepper. Cover and refrigerate a minimum of 12 to 24 hours. 

2. Allow steaks to sit at room temperature 20 to 30 minutes before grilling.

3. Grease grill grates and preheat grill to high (450 to 500 degrees).

4. Place steaks on the grill and cook 4 to 5 minutes, then turn over. Cook an additional 3 to 4 minutes for medium rare steak (130°F). Using an meat thermometer check temperature and cook until the desired doneness is reached.

5. Remove steaks from grill and cover with foil. Allow steaks to rest for about 5 to 10 minutes before serving.

Best Temp to Grill Steaks

The best temp to cook ribeye steak is about 450 to 500 degrees F.

A steak that is 1 to 1½ inches thick will take approximately 7 to 10 minutes depending upon the desired doneness you wish to achieve.

How Long to Grill Ribeye

An approximate ribeye steak grill time for a 1 to 1½" thick ribeye steak is about 7 to 9 minutes for medium-rare at 450 to 500 degrees.

Medium rare steak temperature is 130 degrees to 135 degrees. Please see recipe card for final steak doneness chart.

There are so many things you can serve with a ribeye. Here are my favorites! 

  • Grilled vegetables
  • Baked or roasted potatoes
  • Corn on the cob
  • Top with blue cheese sauce
  • Layered Salad (Layered Overnight Salad)
  • Low Carb Coleslaw (Dill Pickle Slaw)
  • Zucchini Carpaccio
  • Baked Zucchini Casserole With Cheese
  • Blue Cheese Wedge Salad

Expert Tips for How to Cook Ribeye Steak

  • If cooking more than one steak at a time, be sure to buy a similar thickness this will make it easier to estimate your time and cook properly. Steaks that are approximately 1 to 1½" thick work the best.
  • For best results, salt and pepper steaks 12 to 24 hours ahead of grilling. Use kosher salt if possible.
  • Feel free to use garlic, diced fresh herbs, or another favorite seasoning at the time you season with salt and pepper. You may even use a marinade. The key is to season with salt and marinate 24 hours prior to grilling.
  • Allow steaks to sit at room temperature at least 30 minutes (up to 1 hour) prior to grilling.
  • The ideal grill temperature to cook steaks is between 450 and 550 degrees.
  • Spray any flame flare-ups with water.
  • Use a meat thermometer to test doneness - an instant read one is most convenient! Pull your ribeye steak off the grill at the low end of the range. For example, if you like your steak medium-rare pull your steak off at 130° F. 
  • As soon as steaks are removed from the grill, set on a platter, then tent with foil. Allow to steaks to rest for 5 to 10 minutes before serving. The internal temperature of the steak will continue to increase for a few minutes. The juices will also reabsorb. 

Best Way to Cook Ribeye Steak FAQs

How do you cook a ribeye steak so it's not tough?

Season generously with salt and pepper and let the steaks sit in an airtight bag up to 2 days before cooking. Cook room temperature steaks on high heat just until they are 5 degrees lower in temperature than your desired degree of doneness (see temperature chart in the recipe card). Cover the steaks with foil and let sit about 5 to 8 minutes.

How do you cook a steak on a gas grill?

Heat grill to high (450 and 550° F). Place seasoned/marinated steaks on the grill. Grill steaks, turning once until done the way you like it. Use an instant-read thermometer to test doneness. (Medium-Rare: 130° - 135° F; Medium: 140° - 145° F; Medium-Well: 150° - 155° F). Remove steaks from grill, tent with foil for 5 to 10 minutes before serving. 

What temperature do you cook steak on a gas grill?

To cook a steak on a gas grill, the temperature should be between 450 to 550° F. 

How long do I cook a steak on each side?

This all depends upon the thickness of the steak. A 1u0022 to 1½u0022 steak is quite common so based on this thickness. With a grill temperature between 450 and 500° F cook the steaks for 4 to 5 minutes then flip and cook an additional 3 to 5 minutes for medium-rare. Keep the steaks on the grill until they reach the desired temperature. 
Medium Rare: 130° - 135° F
Medium: 140° - 145° F
Medium Well: 150° - 155° F

How do you Season steak for grilling?

There are any infinite ways of seasoning steak for grilling! You can start by using just olive oil, salt, and pepper. Basic, yes. But it results in very juicy grill steak. A dry steak rub is always a great option or a steak marinade. If your grill allows, it's fun to use a variety of wood chips which of course add a great smoky taste.

Ingredients
  

  • ⅓ cup olive oil (optional)
  • 3 teaspoons kosher salt
  • 2 teaspoons pepper
  • 3 (10 to 12-ounce) ribeye Steaks (approximately 1 to 1½" thick)

Instructions
 

  • Brush both sides of each ribeye with olive oil and generously sprinkle both sides with kosher salt and pepper. Cover and refrigerate 12 to 24 hours. 
  • Allow steaks to come to room temperature 20 to 30 minutes before grilling. Preheat gas grill to high (450 to 500 degrees). (Tip: to test a charcoal grill temperature you should be able to hold your hand over the grate for only 2 to 4 seconds.)
  • Place steaks on the grill and cook 4 to 5 minutes, then turn over. Cook an additional 3 to 4 minutes, or until the steaks reach 125 degrees F (final medium-rare temp 130°F). (Tip: use an instant-read thermometer to check the temperature and cook until the steaks are 5 degrees less than your desired doneness, using the below final temperature doneness as a guide.)
  • Remove steaks from grill and cover with foil. Allow steaks to rest for about 5 to 10 minutes before serving. The temperature of the steaks will continue to rise about 5 degrees while they are resting.

    Our steak turned out perfect!! Rubbed salt and pepper I n the steak right after I brought it home and then kept it in the fridge for 2 days. Took it out early to bring to room temp then grilled according to your instructions! So tender!! thanks so much.
