Baked Zucchini Casserole With Cheese, with carrots, zucchini, and a cheesy sour cream herb sauce - is so dang good! Super easy to make and bake. This is a recipe that everyone will enjoy. Make it in an ovenproof skillet, and you've got a one-pan casserole!

Easy and Delicious

This is a quick and easy zucchini casserole to make. Simply saute the veggies until soft, mix in the remaining ingredients (sour cream, cheese, salt, pepper, and seasoning), then bake!

One Dish

You don't have to use a 1.5-quart casserole dish if you use an ovenproof skillet! Just saute your veggies until tender then mix in remaining ingredients, top with pork panko and send it straight to the oven!

I love to do this when I'm cooking for my family. If we have company over or, are serving for a holiday meal, I make in a casserole dish

Low Carb and Keto-Friendly

To make this casserole low-carb and keto-friendly, use crushed pork rinds. To lower the fat in this recipe, use fat-free sour cream and potentially reduce the amount of cheese used.

Keto followers may be concerned about carrots. Even with carrots and onion this dish only has 7.4 g net carbs. You can also substitute additional zucchini in place of the carrots. I don't recommend replacing the onion as it will remove a lot of flavor from the zucchini casserole.

Zucchini Casserole Recipe Ingredients

  • Butter
  • Vegetables: zucchini, carrots, and onion.
  • Garlic
  • Sour cream
  • Cheddar cheese
  • Seasonings: salt, pepper, and Italian seasoning.
  • Crushed pork rinds or Seasoned Breadcrumbs: crushed pork rinds are also called pork rind panko. If not following a keto diet you use seasoned breadcrumbs instead. (crushed pork rinds or seasoned breadcrumbs)

How To Make This Cheesy Zucchini Bake

Prep

Preheat oven to 350 degrees F. Prepare and assemble all ingredients. Spray a 1.5-quart casserole dish with nonstick spray.

Saute

In a 12" skillet, melt butter and saute onions and carrots until they are almost tender. Add zucchini and garlic to pan and saute until all vegetables are tender.

Mix

Turn stove off. Mix in sour cream, cheese, salt, pepper, and Italian seasoning. Spoon mixture into the casserole dish and sprinkle with pork panko or breadcrumbs.

Tip: if you have a cast-iron skillet you can mix all your ingredients in the pan and send it right to the oven. No need for a separate casserole dish! 🙂

Bake

Bake for approximately 20 minutes or until cheese is melted and panko/breadcrumbs are golden brown. That's it! Enjoy!

Should zucchini be peeled?

It depends upon the recipe. For this baked zucchini recipe, you do not have to peel the zucchini.

Can I use squash instead of zucchini?

Yes. You can use squash instead of zucchini, or even a combination of zucchini and other squashes.

Do I have to use carrots?

No. You can substitute additional zucchini or squash in place of carrots.

How long will casserole keep in the refrigerator?

A casserole will keep 3 to 4 days in the refrigerator

How can I lower the fat in this recipe?

To lower the fat in this recipe you can use low-fat sour cream, and reduce the butter by 1 tablespoon. Use breadcrumbs instead of pork panko if you are not following a keto or low carb diet.

Ingredients
  

  • 3 tablespoons butter
  • 4 medium zucchini sliced (about 4 to 5 cups)
  • 3 carrots (thinly sliced)
  • ½ cup onion (chopped)
  • 1 garlic clove (minced)
  • 8 ounces sour cream
  • 1 cup cheddar cheese (grated)
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ tablespoon Italian seasoning
  • ¼ cup seasoned breadcrumbs or crushed pork rinds (low carb and keto: use crushed pork rinds - also called pork panko)

Instructions
 

  • Preheat oven to 350 degrees F. In a large skillet, melt butter. Saute onions and carrots until almost tender. Add zucchini and garlic to pan with onions and carrots. Saute until all vegetables are tender. Remove from heat and mix in sour cream, cheese, salt, pepper, and Italian seasoning.
  • Spray a 1.5-quart baking dish with nonstick spray. Spoon the vegetables into the casserole dish. Sprinkle the breadcrumbs or pork panko over the mixture. Bake uncovered for 20 to 25 minutes, until the cheese is melted and the topping is golden brown.

Kori's Tips

Make this a one-pan casserole by sauteing vegetables in an ovenproof or cast-iron skillet, adding remaining ingredients, then sending straight to the oven.

    This is 5-Stars the way I made it. Used 5 zucchini, 3 were large other 2 were smaller. Used more sour cream and cheese and used Italian breadcrumbs on top. Also boiled 1/2 the zucchini in pot for 5 minutes (couldn't fit all the zucchini to saute). I'd rather spend a few carbs on few breadcrumbs that carrots in this dish, just never been a fan of pork rinds on casseroles.

    I wish this included an exact measurement for the amount of zucchini to use (i.e. how many cups or ounces?) I have a HUGE zucchini...no idea how to equate it to 4 medium.
