You'll love this marinade for lamb! The Greek-inspired flavors will complement any cut of lamb perfectly. Finish by pan-searing, roasting, or grilling your meat. Can also be used on pork, chicken, turkey, fish, shellfish, and even vegetables!

You can use this marinade for lamb, chicken, and pork too. It also goes well on vegetables for grilling or roasting. Sometimes I even use it for salad dressing - green salad or even pasta salad. So versatile!

Healthy

This lamb marinade is healthy - gluten-free, low carb, keto, vegan, dairy-free, and sugar-free. No unpronounceable ingredients! Hooray to that! 🙂

What You'll Need

Here are the ingredients and equipment you will need to make this marinade for lamb:

  • Extra Virgin Olive Oil
  • Red Wine Vinegar - feel free to try a different kind of vinegar!
  • Garlic - I typically use 3 to 4 cloves of fresh garlic or the jarred kind if I'm in a hurry.
  • Dried Oregano
  • Dried Rosemary - fresh minced rosemary may also be used.
  • Dried Thyme
  • Salt - I used kosher salt
  • Ground Black Pepper

Substitutions and Variations

Here are a few ways you can vary or make substitutions to your lamb marinade:

  • Italian inspired - use 3 teaspoons of Italian seasoning blend instead of the oregano, thyme, and rosemary.
  • Give it a spicy kick - use cayenne pepper, extra ground black pepper, or red pepper flakes.
  • Give it a little citrus twist by adding fresh or dried lemon zest. You could also add a little lemon juice - start with 1 teaspoon it is quite potent. Make sure to reduce some of the red wine vinegar so you balance the tanginess.
  • Indian inspired - add a little curry powder or other Indian-inspired flavors like garam masala, cumin, ginger, coriander, cilantro, etc.

How To Make Marinade for Lamb

  1. Add all the ingredients to a small bowl and stir until combined (you can also add to a jar and shake it up).
  2. Place your lamb meat of choice into a shallow dish or sealable plastic bag, then pour the marinade over the top.
  3. Cover or seal, then refrigerate for 15 minutes up to 24 hours.
  4. Cook your lamb according to your favorite method - grill, broil, pan-sear, air fry, or roast.

How To Use It

Here are a few ways to use lamb marinade:

  • 1 recipe yields about ½ cup and will marinate about 2 pounds of lamb.
  • It makes great marinated lamb loin chops, lamb shoulder, lamb leg, and lamb steaks - then grill, roast, pan-sear, or air fry! Grilled lamb chops are a favorite of mine!
  • Use on vegetables then roast or grill them
  • Not just for lamb! Use on chicken, turkey, pork - even fish and shellfish.
  • Use it as a salad dressing for pasta salad or a fresh green salad.

Top Tips

  • For best flavor use the freshest dried herbs.
  • Adjust any of the quantities or herbs if you wish!
  • Marinate your lamb anywhere from 15 minutes to 24 hours.

How long should you marinate lamb?

You should marinate lamb from 15 minutes up to 24 hours. The longer you marinate your lamb the better as it will add more flavor.

Do you need to marinate lamb?

While marinade adds a delicious flavor to your meat, you do not need to marinate lamb as it is very tender on its own. If you really want to go simple just sprinkle it with salt and pepper.

How to store it

Store leftovers in an airtight container in the refrigerator for up to 1 week. The olive oil will solidify when it gets cold. Take it out of the fridge to liquefy a few hours before using.

Ingredients
 
 

  • 1½ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 tablespoon garlic (minced)
  • ⅓ cup olive oil
  • ⅓ cup red wine vinegar

Instructions
 

  • Mix all ingredients together in a small bowl.
  • Cover 1½ to 2 pounds of lamb with marinade and refrigerate for a minimum of 15 minutes up to 24 hours.

    Great recipe, everyone loved the lamb kabobs I grilled. I made a small change because I did not have red wine vinegar and used about a tablespoon of balsamic vinegar instead.
