I don't recommend freezing this recipe. The creamy dressing can separate after thawing and change the texture.

Ingredients
  

  • 3 cups cooked chicken breast cut into large chunks
  • 2 hard-boiled eggs finely chopped
  • ½ cup finely chopped celery
  • ¾ cup light mayonnaise
  • ½ cup plain Greek yogurt
  • ½ to 1 cup healthy sweet pickle relish (add to taste)
  • 2 to 3 teaspoons fresh lemon juice (adjust to taste)
  • ½ teaspoon kosher salt (adjust to taste)
  • ¼ teaspoon black pepper (adjust to taste)

Instructions
 

  • Add the chicken to a food processor and pulse just until finely chopped. The texture should look finely shredded and creamy-looking - not chunky, but not pureed into a paste either.

  • Transfer to a large mixing bowl and add the rest of the ingredients. Stir to combine.

  • Taste and adjust seasoning, lemon juice, and sweet dill pickle relish as needed (see Tips below). Chill for at least 30 minutes before serving so the flavors meld.

TIPS: The brand of mayo and sweet dill pickle relish will greatly impact the taste of this recipe - adjust as needed. For testing purposes, I used light Hellmann's mayo and my own sweet dill pickle recipe. Pulse the chicken lightly and stop before it becomes pasty - the end goal is a finely textured chicken salad with small bites of celery and egg throughout. 
VARIATIONS: While not in the original Chick-fil-a recipe, dried fruit such as cranberries, toasted chopped nuts, and even chopped grapes can be added. Stir in extra celery for more crunch.
SERVING SUGGESTIONS: Serve on whole grain bread, croissants, flour tortillas, or lettuce wraps. Scoop with crackers or cucumber slices. Add to a salad bowl for a high-protein lunch.
