  • 1½ cups liquid egg whites
  • 1 cup low-fat cottage cheese
  • 2 tablespoons roughly chopped sweet onion
  • ½ cup shredded part-skim mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
  • ⅓ cup pizza sauce (plus extra for serving)
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon garlic powder
  • ¼ teaspoon kosher salt
  • Pinch black pepper
  • 1 fully cooked and diced Italian chicken or turkey sausage link
  • ¼ cup finely chopped turkey pepperoni
  • Chopped fresh basil for garnish (optional)

Instructions
 

  • Preheat the oven to 325°F. Generously coat a 12-cup muffin pan with nonstick cooking spray or use a silicone muffin pan.
  • To a blender, add the egg whites, cottage cheese, onion, Parmesan cheese, pizza sauce, mozzarella, Italian seasoning, garlic powder, kosher salt, and black pepper. Blend until completely smooth.

  • Divide the diced chicken sausage and turkey pepperoni evenly among the 12 muffin cups. Pour the egg mixture evenly over the fillings, filling each cup about ¾ full. Using a small spoon or butter knife, gently stir each cup once or twice to distribute the fillings.
