You'll LOVE this healthy Flaxseed Muffin Recipe because it is so easy to grab on the go for breakfast or a snack! They are moist and delicious with a hint of cinnamon—plus, you can add whatever you like. Flaxseed is loaded with healthy fats like omega 3s and fiber, PLUS these muffins are sugar-free, dairy free, and gluten free!

Why You'll Love Them

  • Grab and Go. Package these muffins individually so they are easy to grab while on the go for breakfast or for a midday pick me up. Store extras in the freezer in freezer bags for later!
  • Moist and delicious! These flaxseed muffins recipe are moist and perfectly balanced. I love the touch of cinnamon, and you can add extras like nuts, raisins, or sugar-free chocolate chips.
  • Healthy. Flaxseeds are loaded with healthy fats like omega 3's and fiber and have been shown to reduce the risk of some cancers! They are also sugar-free, low carb, keto-friendly, dairy free, and gluten free.

What You'll Need

Here are the ingredients you will need to make easy flaxseed muffins:

  • Ground Flaxseed: ground flaxseed is the most beneficial to use in baking recipes versus using whole flaxseed.
  • Sugar: use regular sugar or a sugar substitute that is equal to a 1:1 ratio.
  • Cinnamon: ground cinnamon of any variety you prefer will work well in this recipe.
  • Gluten Free Baking Powder: use regular or gluten-free based on personal preference.
  • Eggs
  • Vanilla Extract: a high-quality vanilla extract will give the best flavor. You can also add vanilla bean paste in place of the extract if desired.
  • Water
  • Coconut Oil: you'll need to melt your coconut oil before using it; however, make sure it is not too hot before adding it to the recipe.

Variations and Substitutions

  • Add fresh berries or bananas for extra flavor!
  • Use granulated sugar- regular or substitute as long as it has a 1:1 ratio.
  • A neutral oil such as avocado or canola oil can be substituted for coconut oil.
  • Add other nuts, seeds, or raisins for a trail mix type of healthy muffin.
  • Add sugar-free chocolate chips for extra sweetness.

How To Make It

  1. Stir all dry ingredients together.
  2. Blend together all wet ingredients.
  3. Add the wet ingredients to the dry and combine. Let sit for 5 minutes.
  4. Grease muffin cups or use liners and add one-quarter cup of batter.
  5. Bake until done.

How To Serve It

Grab for breakfast or a snack!

Serve warmed or at room temperature.

Serve with a pad of butter, coconut oil, peanut butter, almond butter, honey, or your favorite jam!

Kori's Tips

  • Let your batter sit for at least 5 to 10 minutes so that it can thicken.
  • Double or triple your recipe for extras! They freeze very well for later.
  • Spray your muffin tins or silicone liners with nonstick spray to prevent sticking regardless of cooking method.

Are flax muffins good for you?

Absolutely! Flaxseed is not only loaded with omega 3s but also plenty of fiber. Studies have shown that it reduces cancer risk, high blood pressure, sugar regulation, and gut health. Especially when made with a sugar substitute, you can keep the sugar content very low, making these muffins extra healthy to eat!

Does cooking destroy the benefits of flaxseed?

No, cooking flaxseed does not destroy the health benefits at all! Bake your muffins no higher than 350 degrees F to protect the good benefits.

What does flaxseed do to your gut?

Flaxseed is loaded with fiber, which is great for digestion. It has also been shown to support healthy bacteria in the gut, which is great for the immune system and digestion.

Once cool store your muffins at room temperature in an air tight container for up to 1 week.

Ingredients
  

  • 2 cups ground flaxseed
  • 1 cup granulated sweetener (organic cane sugar or a granulated sugar substitute with a 1:1 sugar ratio may be used)
  • 2 tablespoons ground cinnamon
  • 1 tablespoon gluten-free baking powder (regular baking powder may be used)
  • 5 large eggs
  • 2 teaspoons vanilla extract
  • ½ cup water
  • ½ cup coconut oil (melted but not hot)
  • ¼ teaspoon fine salt

Instructions
 

  • Preheat oven to 350 degrees F (325 ℉ convection). In a large mixing bowl, stir together the flaxseed, sweetener, cinnamon, and baking powder.
  • In a blender add all of the wet ingredients, including coconut oil. Blend for 30 seconds.
  • Add the blended wet ingredients to the large bowl of dry ingredients, stirring until just incorporated. Let the batter sit for 5 minutes.
  • Grease 12 muffins cups or use silicone liners. Fill with approximately ¼ cup of the batter.
  • Bake for 12 to 18 minutes or until a toothpick inserted in the center comes out clean.
  • Remove from the oven and place on a wire rack to cool. Once cool, store in an airtight container in the refriferator for up to one week.

  • VARIATIONS:  Fresh berries or chopped bananas may be added. Use any granulated sugar - regular or substitute as long as it has a 1:1 sugar ratio (results may very slightly as well as sweetness levels). A neutral oil such as avocado or canola oil can be substituted for coconut oil. 
  • TIPS: It's is important to let the batter sit for 5 to 10 minutes so that it can thicken. This recipe can easily be doubled and extra muffins frozen for later. 
  • SERVING SUGGESTIONS: Eat them all by themselves, or slather on some coconut oil, butter, nut butter, honey, or a favorite jam.

    I loved them! They are more dense than traditional muffins, but as I have to watch my sugars and no gluten these are a great alternative. I find the gluten free flours are just not that healthy. These are very healthy for you!
