Gluten Free Flaxseed Muffins
Ingredients
- 2 cups ground flaxseed
- 1 cup granulated sweetener (organic cane sugar or a granulated sugar substitute with a 1:1 sugar ratio may be used)
- 2 tablespoons ground cinnamon
- 1 tablespoon gluten-free baking powder (regular baking powder may be used)
- 5 large eggs
- 2 teaspoons vanilla extract
- ½ cup water
- ½ cup coconut oil (melted but not hot)
- ¼ teaspoon fine salt
Instructions
- Preheat oven to 350 degrees F (325 ℉ convection). In a large mixing bowl, stir together the flaxseed, sweetener, cinnamon, and baking powder.
- In a blender add all of the wet ingredients, including coconut oil. Blend for 30 seconds.
- Add the blended wet ingredients to the large bowl of dry ingredients, stirring until just incorporated. Let the batter sit for 5 minutes.
- Grease 12 muffins cups or use silicone liners. Fill with approximately ¼ cup of the batter.
- Bake for 12 to 18 minutes or until a toothpick inserted in the center comes out clean.
- Remove from the oven and place on a wire rack to cool. Once cool, store in an airtight container in the refriferator for up to one week.
