Instructions
Preheat the oven to 325°F. Generously coat a 12-cup muffin pan with nonstick cooking spray or use a silicone muffin pan.
To a blender, add the egg whites, cottage cheese, onion, Parmesan cheese, pizza sauce, mozzarella, Italian seasoning, garlic powder, kosher salt, and black pepper. Blend until completely smooth.
Divide the diced chicken sausage and turkey pepperoni evenly among the 12 muffin cups. Pour the egg mixture evenly over the fillings, filling each cup about ¾ full. Using a small spoon or butter knife, gently stir each cup once or twice to distribute the fillings.
Bake for 22 to 26 minutes, or until the egg bites are puffed and the centers are just set. Let cool in the pan for 5 minutes before removing. Garnish with fresh basil, if desired, and serve with warm pizza sauce for dipping.
