The backstory.

Taco night has always been one of the easiest ways to get everyone excited about dinner around my house. Over the years I've made plenty of versions of seasoned ground beef, but this one became a favorite because it strikes the perfect balance between easy and flavorful. A few pantry staples, a can of diced tomatoes with green chilies, and homemade taco seasoning transform ordinary ground beef into something that tastes like it came from your favorite taco shop.

It's a must-make.

Mexican ground beef is one of those recipes that works just as well for busy weeknights as it does for feeding a crowd.

  • Big flavor, minimal effort. A handful of simple ingredients creates a rich, flavorful taco filling in less than 20 minutes.
  • Perfect for meal prep. Make a double batch and save some homemade taco meat for future lunches and dinners.
  • Flexible and versatile. Use it in tacos, burrito bowls, salads, lettuce wraps, casseroles, and more.
  • A healthier taco night option. This recipe is gluten free, low carb, and contains no added sugar while still delivering plenty of flavor.

One of my favorite ways to "upgrade" taco meat from the basic seasoning packet taco meat recipe - but it's still super easy. I make my own taco seasoning mix but you could buy it from the store if your prefer.

Let's talk texture and flavor.

This Mexican-style ground beef is savory, hearty, and packed with classic taco flavor. The diced tomatoes with green chilies add a subtle tang and gentle heat while the taco seasoning brings together a blend of spices and herbs that soak into every bite. The beef stays juicy and tender, making it the perfect filling for restaurant-style tacos, bowls, and more.

What you'll need.

Mexican ground beef ingredients.Pin

Here's what your going to need to make Mexican ground beef.

  • Olive oil: Helps brown the beef and soften the onions.
  • Ground chuck (80/20): The ideal balance of lean meat and fat for juicy, flavorful ground beef.
  • Diced onions: Adds sweetness and depth of flavor.
  • Diced tomatoes with green chilies: Brings moisture, flavor, and a little kick.
  • Minced garlic: Adds savory richness.
  • Taco seasoning mix: The key ingredient for classic homemade taco meat flavor.
  • Salt: Enhances all the flavors.
  • Pepper: Adds a mild layer of seasoning.
  • Water: Helps distribute the seasoning and creates a saucy texture while simmering.
  • Corn or flour tortilla shells (optional): Perfect for building tacos.
  • Grated cheese (optional): A classic taco topping.
  • Favorite taco toppings (optional): Lettuce, tomatoes, salsa, sour cream, olives, and more.

If you're looking to upgrade taco night, there are plenty of delicious ways to put this Mexican ground beef to work. Try my Mexican Ground Beef and Potatoes Recipe for a hearty one-skillet dinner that's packed with flavor and perfect for busy weeknights. If you're craving something fresh and customizable, my Easy Taco Salad Recipe turns all those classic taco flavors into a satisfying meal-sized salad. And for a fun twist on taco night, Taco Stuffed Bell Peppers are always a hit - loaded with seasoned beef, plenty of toppings, and all the flavor you love in a colorful, easy-to-serve package.

Customize it your way.

Mexican ground beef for tacos is easy to personalize based on your flavor preferences and how spicy you like your food.

  • Stir in sliced jalapenos for extra heat.
  • Add red pepper flakes for a spicier taco filling.
  • Use hot diced tomatoes and chilies instead of mild.
  • Mix in diced green chilies for additional flavor.
  • Top with avocado, salsa, shredded cabbage, or fresh cilantro.
  • Sprinkle with cotija cheese or shredded cheddar.
  • Add a splash of hot sauce before serving.

Flexible dietary swaps.

Since Mexican ground beef is naturally adaptable, it's easy to make it fit different dietary needs.

  • Lower Fat: Use lean ground beef, ground turkey, or ground chicken instead of ground chuck.
  • Dairy-Free: Skip the cheese and dairy-based toppings.
  • Gluten Free: Use certified gluten-free taco seasoning and gluten-free corn tortillas.
  • Low Carb: Serve in lettuce wraps, taco bowls, or over cauliflower rice instead of tortillas.
  • Lower Sodium: Use a reduced-sodium taco seasoning and reduce added salt to taste.

How to make Mexican ground beef for tacos.

Mexican ground beef comes together quickly in one skillet and is perfect for busy weeknights.

  1. Heat olive oil in a large skillet over medium-high heat and add the ground beef and onions.
  2. Cook until the beef is browned and fully cooked while breaking it into smaller crumbles as it cooks.
  3. Stir in the diced tomatoes with green chilies, garlic, taco seasoning, water, salt, and pepper.
  4. Simmer until the liquid reduces and the beef is coated in a rich, flavorful sauce.
  5. Spoon into warm tortillas or use however you'd like.

How to serve it.

Mexican ground beef is one of those versatile recipes you'll find yourself reaching for again and again.

  • Fill warm corn or flour tortillas and top with shredded lettuce, tomatoes, cheese, and salsa.
  • Build a taco salad with greens, avocado, and your favorite toppings.
  • Add it to burrito bowls with rice, beans, and fresh vegetables.
  • Use it as a filling for stuffed peppers.
  • Spoon it over cauliflower rice for a low carb meal.
  • Layer it into nachos or taco casseroles.
  • Wrap it in lettuce leaves for a lighter option.

Kori's tips.

  • Use 80/20 ground beef. The extra fat adds flavor and helps keep the meat juicy.
  • Make homemade taco seasoning. It gives the best flavor and lets you control the ingredients.
  • Simmer until the liquid is absorbed. This helps the seasonings cling to the meat instead of pooling in the pan.
  • Double the batch. Homemade taco meat freezes beautifully and makes future meals easier.
  • Don't rush the onions. Let them soften fully for the best flavor.

FAQs

Kori's Tips

  • Don't miss all of our helpful hints, substitution ideas, cooking tips, and other delicious recipes that can be found in our post. Check it out!
  • VARIATIONS: For more spice add hot diced tomatoes and chilies, diced green chilies, red pepper flakes, sliced jalapenos, or hot sauce to the meat mixture.
  • SUBSTITUTIONS: Feel free to use ground turkey or chicken in place of the ground beef. Lower the fat content by using a lower fat ground beef
  • TOP TIPS: For best flavor use ground beef with 80/20 fat content (20% fat). Meal prep: make extra batches of the taco meat and freeze some for later! Make my homemade taco seasoning (it's easy!) or buy a store-bought packet, either one is fine but the best flavor comes from the homemade version. 😊 Make extra and save some for future recipes!
  • SERVING SUGGESTION: Ground beef taco recipe toppings: grated cheese, shredded lettuce, diced tomatoes, sliced green onion, sour cream, salsa, or sliced black olives. Low carb keto followers are sure to use a low carb tortilla or serve on its own or wrapped in lettuce. This meat is used in my Mexican Ground Beef and Potatoes Recipe!
