The backstory.

I've always had a soft spot for recipes that can pull double duty. Some days I want a simple side dish to go with grilled chicken, and other days I want a hearty salad that can stand on its own as a meal. This Mediterranean barley salad checks both boxes and comes together in just a few minutes.

It's a must-make.

Mediterranean barley salad brings together simple ingredients, is easy to make, and versatile.

  • It's fresh and colorful. Every bite is packed with crisp vegetables, bright herbs, and vibrant Mediterranean-inspired flavors.
  • It's healthy and satisfying. Barley adds fiber and staying power, making this salad filling without feeling heavy.
  • It's perfect for meal prep. The flavors get even better after a little time in the refrigerator.
  • It works as a side dish or meal. Enjoy it alongside your favorite protein or add protein directly to the salad for a complete meal.

I love recipes like this - simple ingredients, fresh flavors, and plenty of ways to make it your own.

Let's talk texture and flavor.

This salad is all about contrast. Tender barley provides a pleasantly chewy bite while fresh vegetables add crunch and brightness. The kalamata olives bring a salty richness, the feta cheese adds creamy tanginess, and the homemade Greek salad dressing ties everything together with herbaceous, zesty flavor. It's refreshing, hearty, and incredibly balanced.

What you'll need.

Ingredients needed for making Mediterranean barley salad on a white board.

Here's what your going to need to make Greek-style barley Mediterranean salad.

  • Cooked Barley: The hearty base of this healthy salad.
  • Green Bell Pepper: Adds crunch, color, and fresh flavor.
  • English Cucumber: Crisp and refreshing with fewer seeds than traditional cucumbers.
  • Roma Tomatoes: Firm tomatoes help keep the salad from becoming watery.
  • Red Onion: Adds a little bite and sharpness.
  • Kalamata Olives: Bring classic Mediterranean flavor and a salty finish.
  • Feta Cheese: Creamy, tangy chunks that make every bite better.
  • Extra Virgin Olive Oil: Creates a rich, silky dressing.
  • Red Wine Vinegar: Adds brightness and acidity.
  • Garlic: Provides savory depth.
  • Dried Oregano: A classic Mediterranean herb.
  • Dried Dill: Adds fresh herb flavor.
  • Salt: Enhances all the ingredients.
  • Black Pepper: Adds a touch of warmth and spice.

Customize it your way.

This barley salad Mediterranean style recipe is wonderfully flexible, making it easy to adapt in a few different ways.

  • Add grilled chicken for a heartier meal.
  • Toss in cooked shrimp for a Mediterranean-inspired seafood version.
  • Stir in chickpeas for extra texture and plant-based protein.
  • Swap the barley for cooked pasta to create a Greek-style pasta salad.
  • Add roasted red peppers for extra sweetness and color.
  • Mix in fresh parsley or mint for additional herb flavor.
  • Use cherry tomatoes instead of roma tomatoes if that's what you have available.

Flexible dietary swaps.

Mediterranean barley salad is easy to adapt for different dietary needs while keeping all of its fresh, flavorful character.

  • Vegetarian: No changes needed.
  • Gluten-Free: Substitute cooked quinoa, brown rice, or gluten-free grains for the barley.
  • Dairy-Free: Omit the feta cheese or use your favorite dairy-free feta alternative.
  • Lower Sodium: Reduce the olives and feta slightly and season carefully before serving.
  • Vegan: Replace the feta with a plant-based alternative or simply leave it out.

How to make this barley salad Mediterranean-style.

One simple dressing, a bowl full of fresh ingredients, and a little time in the fridge are all it takes to bring this Mediterranean barley salad together.

  1. Whisk together the olive oil, red wine vinegar, garlic, oregano, dill, salt, and pepper until well combined.
  2. Place the cooked barley, bell pepper, cucumber, tomatoes, red onion, olives, and feta cheese in a large serving bowl.
  3. Pour the Greek dressing over the salad and gently toss until everything is evenly coated.
  4. Cover and refrigerate for at least 1 hour before serving so the flavors can blend together beautifully.

How to enjoy it.

Mediterranean barley salad is one of those dishes that fits into almost any occasion.

  • Serve it chilled with grilled chicken, steak, salmon, or lamb.
  • Add extra protein directly to the salad to create a complete meal.
  • Pack it into meal prep containers for easy lunches throughout the week.
  • Bring it to potlucks, picnics, cookouts, and family gatherings.
  • Pair it with hummus, pita, and grilled vegetables for a Mediterranean-inspired spread.

Kori's tips.

  • Use roma tomatoes or cherry tomatoes. They contain less juice than larger tomatoes, helping keep the salad fresh and preventing excess liquid from collecting in the bowl.
  • Remove the cucumber seeds. This simple step reduces extra moisture and helps the salad stay crisp longer.
  • Make the dressing ahead. A few hours in the refrigerator gives the herbs and garlic time to mingle, creating even better flavor.
  • Don't skip the chill time. Letting the salad rest for 1 to 2 hours helps the barley soak up the Greek dressing and allows all the flavors to come together.
  • Taste before serving. Feta cheese and olives can vary in saltiness, so give the salad a quick taste and adjust the seasoning if needed.
  • Cook the barley in advance. Chilled barley makes assembly quick and easy, especially if you're planning this recipe for meal prep or entertaining.

FAQ's

What's the best way to store it?

Store the salad in an airtight container in the refrigerator for up to 4 days. Stir before serving and adjust seasoning if needed.

Can I freeze it?

I don't recommend freezing this salad. The fresh vegetables, feta cheese, and dressing can become watery and lose their texture after thawing.

What protein works best with this salad?

Grilled chicken, shrimp, salmon, steak, lamb, or chickpeas all pair wonderfully with this flavorful salad and can easily transform it into a complete meal.
