Cauliflower steak might just be the easiest way to turn a humble veggie into something seriously crave-worthy. These crispy-edged, tender-centered steaks are healthy, plant-forward, naturally low carb, and ridiculously versatile - whether you make them in the oven, toss them on the grill, or pop them into the air fryer.

The backstory.
I started making cauliflower steaks during one of those weeks when I needed a simple side dish that felt a little more interesting than steamed vegetables. After one quick roast in the oven, I was hooked. The edges turn golden and flavorful, the centers get tender, and suddenly cauliflower feels like something you actually look forward to eating. Now it's one of my favorite plant-forward recipes because it's easy, flexible, and works with just about anything I'm serving for dinner.

It's a must-make.
Cauliflower steak recipe checks every box for busy weeknights, backyard dinners, and those moments when you just want vegetables that actually taste exciting.
- It's surprisingly hearty. Thick-cut cauliflower steaks roast up tender with crispy golden edges that feel satisfying enough to anchor a whole meal.
- Healthy. This vegetarian, vegan, and plant-forward recipe is naturally low carb and packed with fiber while still feeling comforting and cozy.
- Three cooking methods = endless flexibility. Whether you need cauliflower steak oven baked, cauliflower steak grilled, or cauliflower steak air fryer style, this recipe works beautifully.
- The flavor possibilities are endless. Cajun, taco seasoning, parmesan, fresh herbs - you can customize these steaks a hundred different ways without getting bored.
Turns out cauliflower doesn't need much help to taste good - just a little seasoning and some crispy edges.
Let's talk texture and flavor.
Caramelized golden edges with a lightly crisp bite, a soft buttery center, and savory seasoning tucked into every little nook and cranny. The cauliflower becomes slightly nutty as it cooks, and when you finish it with fresh parsley or parmesan, every bite tastes warm, savory, fresh, and just a little smoky. It's the kind of vegetable side dish that disappears faster than the main course.
What you'll need.

Here's what your going to need to make this recipe for cauliflower steaks.
- Cauliflower: The star of the show. Look for medium heads with tight florets and fresh green leaves.
- Extra virgin olive oil: Helps the steaks caramelize beautifully while adding rich flavor.
- Montreal steak seasoning: Adds bold savory flavor fast, but roasted chicken seasoning, Cajun seasoning, taco seasoning, or Creole seasoning all work great too.
- Fresh parsley: Adds a pop of freshness right before serving.
- Parmesan cheese (optional): For a salty, cheesy finish that's especially delicious on baked cauliflower steak.

My Best Riced Cauliflower Recipe is perfect for quick weeknight meals and meal prep, How To Make Pickled Cauliflower adds a crunchy tangy bite to snack boards and salads, and Cauliflower Mac and Cheese is pure cozy comfort food that always disappears fast at my house. Honestly, cauliflower might be one of the hardest-working vegetables in my kitchen.
Customize it your way.
Cooked cauliflower steaks are easy to make your own.
- Sprinkle with smoked paprika and garlic powder for extra smoky flavor.
- Add red pepper flakes or cayenne for a spicy kick.
- Melt mozzarella, cheddar, or parmesan cheese over the top during the last few minutes of cooking.
- Marinade your cauliflower steaks with the seasoning blend for 1 hour prior to cooking to help the steaks absorb the flavors.
- Try a chipotle seasoning blend for smoky heat.
- Finish with fresh lemon juice and herbs for a brighter flavor.
- Use taco seasoning and serve with avocado crema for a fun twist.
- Add chopped parsley, cilantro, or green onions before serving.
Flexible dietary swaps.
One of my favorite things about cauliflower steak is how easy it is to adapt for different lifestyles and dietary needs without sacrificing flavor.
- Vegan: Skip the parmesan cheese or use your favorite dairy-free alternative.
- Dairy-free: Leave off the cheese topping entirely or use nutritional yeast for savory flavor.
- Gluten-free: Double check your seasoning blend label to make sure it's certified gluten-free.
- Lower sodium: Use a homemade seasoning blend so you can control the salt level.
- Plant-forward dinner: Serve alongside grains, beans, or a hearty salad for a balanced vegetarian meal.
How to cook cauliflower steaks.
Whether you roast them in the oven, cook them on the grill, or use the air fryer, cauliflower steaks are easy to make and full of flavor.
- Brush both sides of the cauliflower steaks generously with olive oil and season evenly.
- For baked cauliflower steak, roast at high heat until golden brown and tender, flipping halfway through cooking.
- For cauliflower steak grilled outdoors, cook over medium heat with the lid closed until lightly charred and tender.
- For cauliflower steak air fryer style, cook in a single layer and gently flip halfway through for crisp golden edges.
- Finish with fresh parsley, parmesan cheese, or an extra sprinkle of seasoning before serving.

How to serve them.
Cauliflower steak makes an easy, healthy side dish that works with just about everything.
- Pair with grilled chicken, salmon, or shrimp for an easy dinner.
- Serve alongside a crisp green salad with your favorite dressing.
- Add them to grain bowls with quinoa, chickpeas, or roasted veggies.
- Top with marinara and mozzarella for a vegetarian spin on "steak parmesan."
- Tuck leftovers into wraps, sandwiches, or tacos the next day.
- Serve cauliflower grilled with burgers or kabobs at summer cookouts.
Kori's tips.
- Cut evenly. Keeping the cauliflower steaks close to the same thickness helps them cook more evenly.
- Don't skip the oil. A good coating of olive oil helps the edges turn golden and flavorful.
- Leave the core intact. The stem helps hold the cauliflower steaks together while cooking.
- Cook to your liking. Some people love crisp-tender cauliflower, while others prefer it softer and deeply roasted.
- Use parchment paper. It makes cleanup easier and helps prevent sticking in the oven.
- Save the extra florets. The pieces that fall off are perfect for soups, salads, or stir-fries later in the week.
FAQs
Store leftover cauliflower steaks in an airtight container in the refrigerator for up to 3 days.
Reheat in the oven, air fryer, or skillet to help crisp the edges back up.
What is cauliflower steak? It's simply a thick slice of cauliflower cut vertically through the center so it stays intact while cooking. It's a popular vegetarian and vegan side dish because it's hearty, flavorful, and incredibly versatile.
It probably needs more time in the oven. Cauliflower should be tender with browned, caramelized edges for the best flavor and texture.
Make sure the cauliflower is dry before cooking and avoid using too much oil. Too much moisture can steam the cauliflower instead of helping it roast and crisp up.
