The backstory.

Pork tenderloin has always been one of those easy, reliable dinners in my kitchen. It cooks quickly, uses simple ingredients, and works for just about any night of the week. I started pairing it with a quick honey Dijon mixture for a little extra flavor, and it stuck. It's one of those simple upgrades that makes dinner feel a little more put together without adding any extra work.

It's a must-make.

If you've been searching for an air fryer pork tenderloin that delivers on flavor and texture, this one checks all the boxes in the best way.

  • Juicy every time. The air fryer locks in moisture so the pork stays tender and never dries out.
  • Sweet-tangy flavor. Honey and Dijon create that perfect balance with garlicky, herby notes.
  • Quick and easy. Dinner is done in under 30 minutes with minimal effort.
  • Healthy and high protein. Naturally low carb, gluten free, and packed with lean protein.

If dinner tastes this good and takes less than 30 minutes, I'm calling that a win.

Let's talk texture and flavor.

Each bite is juicy and tender with a lightly caramelized exterior from the honey Dijon glaze. You get that sweet-tangy pop first, followed by garlicky depth and subtle herby notes from the herbes de Provence. A hint of lemon keeps everything bright, so it never feels heavy - just balanced, flavorful, and really satisfying.

What you'll need.

Here's what your going to need to make air fryer pork tenderloin.

  • Pork tenderloin: Lean, high protein, and perfect for quick cooking - it turns out incredibly juicy in the air fryer.
  • Salt: Enhances all the flavors and brings everything together.
  • Ground black pepper: Adds a subtle bite and depth.
  • Dijon mustard: Tangy and bold - the backbone of that signature flavor.
  • Honey: Brings natural sweetness and helps create that lightly caramelized finish.
  • Olive oil: Adds richness and helps the seasoning coat evenly.
  • Herbes de Provence: A blend of dried herbs that adds a soft, herby flavor.
  • Lemon juice: Brightens everything up with a fresh citrus note.
  • Garlic: Adds that irresistible savory depth.

Optional Honey Dijon Sauce

  • Honey: Sweet and smooth for the sauce base.
  • Dijon mustard: Tangy and sharp to balance the sweetness.
  • Mayonnaise: Adds creaminess and richness.
  • Vinegar: A touch of acidity to keep it balanced.
  • Red pepper flakes: A little heat to round things out.

If pork tenderloin is your kind of easy dinner, there are so many good ways to switch it up. Instant Pot Pork Tenderloin is perfect when you want something quick and extra tender, while Crockpot Pork Tenderloin is great for those slower days when you just want to set it and forget it. And when grilling season rolls around, Pork Tenderloin on the Grill brings that smoky, slightly charred flavor that's always worth it.

Customize it your way.

This pork tenderloin air fryer recipe is super flexible, so you can easily switch things up based on what you're craving or have on hand.

  • Swap the herbes de Provence for Italian seasoning or a mix of thyme and rosemary.
  • Use fresh herbs in place of dried ones. I recommend basil, rosemary, oregano, and thyme.
  • Add a pinch of smoked paprika for a subtle smoky twist.
  • Use maple syrup instead of honey for a slightly deeper, cozy sweetness.
  • Use your favorite mustard in place of the Dijon mustard.
  • Add some chili powder, hot sauce, or hot mustard to your sauce to make it spicy.
  • Add a splash of balsamic vinegar for a richer, slightly tangy finish.

Flexible dietary swaps.

Air fryer pork tenderloin is already a healthy, naturally gluten free, but here are a few easy ways to adapt it even further:

  • Dairy-Free: Skip the mayonnaise in the sauce or use a dairy-free mayo alternative.
  • Low-Sugar: Reduce the honey or use a sugar-free substitute to keep the sweet-tangy balance lighter.
  • Lower-Sodium: Use less added salt and choose a low-sodium Dijon mustard if available.

How to make this pork tenderloin air fryer recipe.

Air fryer pork tenderloin is quick, simple, and delivers juicy results every time.

  1. Preheat your air fryer to 350 degrees F.
  2. Place the seasoned pork tenderloin in the center of the basket.
  3. Cook for about 18 to 22 minutes, turning halfway through.
  4. Remove once it reaches 145 degrees F, then let it rest before slicing and serving.

How to serve it.

Air fryer pork tenderloin is incredibly versatile, so you can dress it up or keep things simple depending on the night.

  • Slice and drizzle with extra honey Dijon sauce for maximum flavor.
  • Serve alongside roasted vegetables or air fryer green beans for an easy healthy dinner.
  • Pair with a simple salad or grain bowl for a lighter, balanced meal.
  • Add leftovers to wraps or sandwiches for an easy next-day lunch.

Kori's tips.

  • Don't overcook it. Pull the pork at 145 degrees F for the best juicy texture.
  • Let it rest. This keeps all those flavorful juices right where you want them.
  • Cut it evenly if needed. Halving the tenderloin helps it cook more evenly in smaller air fryers. If the tenderloin is too long for your air fryer, cut it in half crosswise.
  • Make the sauce ahead. It keeps well in the fridge and gets even better as it sits.

FAQs

What is the best way to store it?

Store leftover pork tenderloin in an airtight container in the refrigerator for up to 3 to 4 days.

Can I freeze it?

Yes - let it cool completely, then freeze in an airtight container for up to 2 months. Thaw overnight in the fridge before reheating.

What's the best way to reheat it?

Reheat gently in the microwave in short intervals or warm it in a skillet over low heat to keep it from drying out.

Can I make this ahead of time?

Absolutely. You can prep the sauce and season the pork ahead, then cook it fresh when ready for the best texture and flavor.

How do you keep pork from drying out in the air fryer?

Brining is an easy way to add moisture and flavor. Soak the tenderloin in a simple saltwater brine (about 1 cup kosher salt to 1 gallon water) for up to 12 hours. Before cooking, pat it dry so the sauce sticks and you get the best texture.
