Air fryer salmon patties are the kind of healthy dinner that feels almost too easy. Crispy on the outside, tender on the inside, and ready in just 20 minutes, they're packed with high protein and made with simple pantry staples like canned salmon, making them perfect for busy weeknights or quick lunches.

The backstory.
I always keep a few cans of salmon tucked away in the pantry because they seem to rescue dinner more often than I'd like to admit. When I want something that tastes homemade without spending much time in the kitchen, these salmon patties come to the rescue. The air fryer gives them that beautiful crispy crust without standing over a skillet, and they're one of those recipes that somehow feels a little special even though they're incredibly simple.

It's a must-make.
If you're looking for an easy meal that checks all the right boxes, these air fryer salmon patties deserve a spot on your menu.
- Ready in just 20 minutes. They come together quickly, making them perfect for busy nights when you still want a homemade meal.
- Crispy outside, tender inside. The pork rind coating creates an irresistible golden crust while keeping the salmon cakes moist and flavorful.
- Healthy and high protein. Made with canned salmon, they're packed with protein while staying naturally low carb and full of satisfying flavor.
- Make ahead freezable. You can make air fryer salmon patties ahead of time and freeze for later. You can then cook the frozen salmon cakes in your air fryer when you are ready!
Who knew a can of salmon was secretly waiting to become dinner's MVP?
Let's talk texture and flavor.
The first bite gives you a crispy, savory crust followed by a tender, flaky center that's loaded with fresh herbs, parmesan, and just enough richness from the mayonnaise. The dill and chives brighten every bite, while the pork rind coating becomes beautifully golden in the air fryer. A squeeze of fresh lemon and a little creamy dill sauce take these salmon cakes to another level.
What you'll need.

Here's what your going to need to make salmon patties in air fryer.
- Canned salmon: The star of the recipe. Remove the larger bones if desired before mixing.
- Parmesan cheese: Adds savory, nutty flavor.
- Mayonnaise: Helps keep the patties moist and tender.
- Egg: Binds everything together.
- Fresh chives: Adds mild onion flavor. Dried chives work too.
- Fresh dill: Gives the salmon cakes bright, fresh flavor.
- Garlic powder: Adds subtle savory depth.
- Onion powder: Balances the seasoning.
- Salt: Enhances all the flavors.
- Black pepper: Adds just a little warmth.
- Crushed pork rinds: Create an incredibly crispy low carb coating.
- Olive oil cooking spray: Helps the crust turn beautifully golden.
- Lemon wedges (optional): Brightens every bite.
- Creamy dill sauce (optional): A delicious dipping sauce that pairs perfectly.

Customize it your way.
One batch of salmon patties air fryer style can become something a little different every time you make it.
- Swap the parmesan for shredded cheddar, Swiss, or pepper jack.
- Use pork panko instead of crushing your own pork rinds.
- Add 1 teaspoon of Dijon mustard or lemon juice for a little more tang. Whether I add this depends on the brand of mayonnaise you use. Some mayo is tangy, so you don't need to add mustard or lemon juice. (I used Better Foods Avocado Oil Mayonnaise).
- Add finely diced jalapenos or hot sauce for a little heat.
- Mix in chopped parsley or green onions instead of dill or chives.
- Add up to 2 tablespoons of finely chopped red bell pepper.
Flexible dietary swaps.
Air fryer salmon patties are naturally flexible, making them easy to adapt for different eating styles.
- Gluten-Free: As written, the recipe is gluten-free when using gluten-free certified ingredients.
- Dairy-Free: Omit the parmesan or use your favorite dairy-free parmesan alternative.
- Lower Sodium: Choose low-sodium canned salmon when available and reduce the added salt.
- Low Carb: The recipe is already naturally low carb thanks to the pork rind coating.
- Higher Healthy Fat: Serve with sliced avocado or an olive oil-based salad for a satisfying meal.
How to cook salmon patties air fryer style.
Once your patties are formed, the air fryer does the rest. Air fryer salmon patties cook quickly and come out crispy every time.
- Mix the canned salmon, parmesan cheese, mayonnaise, egg, chives, dill, garlic powder, onion powder, salt, and pepper together.
- Divide mixture into fourths and firmly press together, forming 4 equal sized patties that are approximately 1" thick. (Be sure to firmly form the patties)
- Press each salmon cake into the bowl of pork rinds. Remove and then press the coating firmly into the patty. Repeat with the second side.
- Arrange the coated salmon patties in a single layer in the air fryer basket and lightly spray the tops with olive oil.
- Cook until the bottoms are golden, then carefully flip each patty.
- Spray the second side lightly with olive oil and continue cooking until both sides are crispy and the centers are hot.
- Serve immediately with lemon wedges and creamy dill sauce, if desired.

How to serve them.
These air fryer salmon patties are incredibly versatile and work for lunch, dinner, or even meal prep.
- Garnish with fresh dill, chopped chives, and lemon wedges.
- Serve with creamy dill sauce for dipping.
- Pair with a fresh green salad for a light meal.
- Add roasted asparagus, green beans, or broccoli on the side.
- Serve alongside cauliflower rice or mashed cauliflower for a low carb dinner.
- Tuck them into lettuce wraps or sandwich buns with tomato and lettuce.
- Make a protein-packed lunch bowl with mixed greens, cucumbers, tomatoes, and avocado.
Kori's tips.
- Use 100% olive oil spray. It helps the salmon patties develop a beautifully crispy, golden crust in the air fryer.
- Don't crush the pork rinds too finely. A few larger pieces create extra crunch and texture on the outside.
- Press the coating on firmly. This helps the crispy coating stay in place while the salmon cakes cook.
- Flip with care. Use a thin spatula and turn the patties gently so they stay together.
- Make a double batch. These salmon patties are freezable and reheat beautifully for quick meals later in the week.
- Serve with creamy dill sauce. The bright, tangy flavor pairs perfectly with the crispy, tender salmon patties.

Lisa
I really liked this recipe, but don't have pork rinds... To keep it gluten free, I coated the patties with potato flakes to create the crust. The air fryer made it perfect!!
