Every summer I start keeping an eye out for green tomatoes because I can't wait to make these. Fried green tomatoes have always been one of those treats that disappear almost as fast as they're served, but I wanted a version that felt a little lighter without giving up that crispy coating. The air fryer turned out to be the perfect solution, and now it's the only way I make them.

  • Cook in a single layer. Giving each tomato slice a little space helps the coating get nice and crispy.
  • Use room temperature tomatoes. Cold tomatoes will take longer to cook and the crust will get crisp and brown before the inside is tender.
  • Adjust as you go. Every air fryer cooks a little differently, so check your first batch and tweak the cooking time if needed.
  • Balance the tartness. If your green tomatoes are especially tangy, sprinkle them with just a pinch of sugar after cooking.
  • Serve them right away. Fried green tomatoes are at their crispiest and most delicious straight from the air fryer.
  • You can use partially ripened tomatoes or even ripened tomatoes. The more ripe the tomatoes, the faster they will cook. With a fully ripe tomato, you only need to be concerned with getting a golden crust; the insides are already soft enough.
  • Use uniform slices. Try and slice your tomatoes the same thickness so they will cook in the same amount of time.
  • Green tomatoes are tart. You can offset the tartness by sprinkling with additional sugar. There is some sugar added to the coating but depending upon the tartness of the tomato (some are very tart) you may need to add more.

Store leftovers in an airtight container in the refrigerator for up to 3 days. Keep in mind they won't be as crispy!

You don't have to use a coating or batter, but for best results, a coating with flour and breadcrumbs is necessary to absorb the tomato's excess moisture and bind the coating while air frying.

Ingredients
  

  • 2 large green tomatoes or 4 small. sliced ½" thick
  • ¼ cup flour
  • 1 egg
  • ½ cup panko
  • ¼ cup parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon sugar or sugar substitute

Instructions
 

  • Preheat air fryer to 350F.
  • Place flour in a small bowl.
  • In a second small bowl, beat the egg.

  • In a third bowl, mix panko bread crumbs, parmesan cheese, Italian seasoning, salt, pepper, and sugar.
  • Dip both sides of the tomato slices first in flour, then the egg mixture, and finally the breadcrumb mixture. Place each slice on a plate until ready to air fry.
