I made this recipe to go with my Slow Cooker Thai Basil Chicken Recipe, but this rice on its own is just amazing. So much flavor. It goes well with many Asian dishes, but would be great with grilled chicken, pork, or steak too. Yum.

Ingredients and Tools
Here's what you'll need to make coconut cauliflower rice:
Ingredients
- 1 large head of cauliflower (3-1/2 to 4 cups cauliflower rice)
- 2 tbsp coconut oil
- 1/2 cup coconut milk
- 1/4 tsp xanthan gum
- 1/4 cup diced green onion or chives
- kosher salt to taste
- lime, cut into wedges
Tools
- 12" skillet
- food processor for making your own cauliflower rice
- cutting board
- chef's knife
- measuring cups
- measuring spoons
How To Make Coconut Cauliflower Rice (Keto Cauliflower Rice)
Melt 2 tbsp coconut oil in a skillet over medium to medium-high heat. Add cauliflower rice and saute until just tender.
Sprinkle xanthan gum over cauliflower, add coconut milk, then stir. Reduce heat to low and stir occasionally until liquid has evaporated and mixture has thickened.
Remove from heat. Add diced green onion and a squeeze of lime, then toss. Salt to taste.
