The backstory.

There was a time when salmon was my "backup dinner" - you know, the thing I'd make when I forgot to thaw chicken or simply didn't have the energy for something complicated. But somewhere between one-pan baked salmon, fresh salmon bowls, and crispy air fryer experiments, I became fully obsessed. Salmon is one of those magical ingredients that feels a little elevated while secretly being ridiculously simple. Plus, it works with just about every flavor craving I have - smoky, spicy, lemony, herby, sweet, savory… all of it.
