The backstory.

You ever open your fridge and realize you have way too many vegetables staring back at you like, "Do something with us already!" That was me last week. I had a half-used zucchini, some mushrooms on their last leg, a bell pepper rolling around, and—oh yeah—a package of ground pork I bought on a whim.

For some reason, ground pork always stumps me. Unless I'm making burgers or meatballs, I draw a total blank. But instead of letting those veggies go to waste or falling back on takeout, I threw everything in a skillet with some garlic, ginger, and my go-to healthy stir fry sauce. And just like that—this pork stir fry was born. Now it’s one of my favorite weeknight dinner wins.

Weeknight dinner goals: fast, flavorful, and minimal mess. This stir fry checks all the boxes—on the table in under 30 minutes and way healthier (and faster) than ordering delivery.

This is the ultimate clean-out-the-fridge meal. Use whatever vegetables are hanging out in your crisper drawer—think snow peas, broccoli, carrots, or bok choy. No waste, all flavor.

💪 Healthier, Your Way

High in protein, low in carbs, and easy to make gluten-free or dairy-free. Just swap in coconut aminos or tamari instead of soy sauce. Want to keep it low carb? Serve it over cauliflower rice. Craving comfort? Go with jasmine or basmati.

When in doubt (and drowning in produce), stir fry saves the day—this one started as a clean-out-the-fridge mission!

What you'll need.

Ingredients needed to make ground pork stir fry.

To make this pork stir fry recipe, you’ll need just a few wholesome ingredients—nothing fancy, just flavorful and flexible.

  • Ground pork – super budget-friendly and quick-cooking
  • Olive oil – or use avocado oil if you prefer
  • Sweet onion
  • Bell pepper – any color!
  • Mushrooms – I used baby bellas, but any will work
  • Zucchini + yellow squash
  • Garlic + ginger – fresh or the pre-minced jarred kind for convenience
  • Stir fry sauce – use my homemade sugar-free version or your favorite store-bought one
  • Salt + pepper
  • Sesame seeds (optional but recommended!)

Make it yours.

  • Make it spicy. Use red pepper flakes or add sriracha for some extra spice! Start light-handed and add more as you'd like! Keep in mind that a little goes a long way.
  • Substitute ground beef, chicken, or turkey for the pork if you like!
  • Add other vegetables that you like (or already have on hand): snow peas, bok choy, green beans, carrots, cauliflower, broccoli, and frozen peas are great ideas! Again, whichever you have on hand will work!

Flexible dietary swaps.

This pork stir fry recipe is super adaptable, so feel free to tweak it based on your dietary needs or what’s in your fridge:

  • Swap the ground pork for ground chicken, turkey, or beef if that’s what you have.
  • Go vegetarian by using plant-based ground meat, crumbled tofu, or even chopped tempeh. Sauté just like you would the pork.
  • For a vegan version, pair tofu or tempeh with a vegan stir fry sauce (check labels to skip honey or fish sauce if store-bought).
  • Make it gluten-free by using coconut aminos or tamari instead of soy sauce.
  • Want it low sodium? Choose a reduced-sodium soy sauce or dilute your sauce with a splash of water or broth.
  • Need it low carb? Skip the rice and serve with cauliflower rice, zoodles, or shredded cabbage.

Cook the pork.

Add onions, then remaining veggies, garlic, and ginger. Stir fry until tender.

Bring it together.

Return pork to the skillet, add sauce, stir to coat, and heat through. Season to taste.

How to serve it.

  • Keep it low carb by serving over sautéed cauliflower rice. Bonus: use the same pan after cooking the stir fry so the cauliflower rice soaks up all that delicious flavor.
  • Classic and cozy? Serve it over jasmine, basmati, or brown rice—whatever your family loves.
  • Craving noodles? Toss it with lo mein or hibachi-style noodles. For a low-carb twist, try shirataki noodles or zucchini noodles.
  • Finish with flair: Top with sliced green onions, cilantro, or toasted sesame seeds for a pop of freshness and texture.

  • Want it spicy? Add red pepper flakes or a squirt of sriracha.
  • Cook heartier veggies like carrots or cauliflower first so they get tender in time.

FAQs

Is ground pork healthier than ground beef?

Ground pork tends to be higher in fat. However, ground beef has a higher level of saturated fats, and pork has higher unsaturated fats. Ground beef has a higher iron level, and ground pork has more B vitamins. So, both have their different health benefits!

What is stir frying?

Simply put, stir-frying is a Chinese cooking technique of continually sauteeing and tossing ingredients in a very hot pan with a small amount of oil until they reach the desired doneness.

Ingredients are usually added in succession from those that take the longest to cook first (meat and fibrous vegetables) to those with the shortest cooking time required.

Stir frying is typically done in a wok as the heat is most concentrated at the narrower base of the pan. A skillet can be used if you don't have a wok.

Can I freeze it?

I do not recommend freezing this recipe. The vegetables become very soggy and release too much water, diluting the flavor of the dish greatly.

What's the best way to reheat it?

Microwave: In a microwave-safe dish, loosely cover the dish and microwave for 1 to 2 minutes on 30% power. Check frequently and stir if as needed.
Skillet: Preheat a skillet over medium heat and add pork stir fry. Stir frequently until warmed through.

How should I store it?

Cool the pork and vegetables, then transfer leftovers to an air-tight container. Store in the refrigerator for up to 4 days.

Ingredients
 
 

  • 1 pound ground pork
  • 2 tablespoons olive oil
  • 1 cup sweet onion (halved then sliced)
  • 1 bell pepper (any color, sliced, about 1 cup)
  • 8 ounces mushrooms (sliced, any kind)
  • 1 medium yellow squash (½" cubes, about 1 cup)
  • 1 medium zucchini (½" cubes, about 1 cup
  • 1½ tablespoons garlic (minced)
  • ½ cup stir fry sauce (or regular store-bought)

Instructions
 

  • Preheat a wok or 12" skillet with oil over medium-high.
  • Cook ground pork until brown and fully cooked. Remove pork, saving a few tablespoons of oil and fat in the pan. Set aside and cover to keep warm.
  • Add onions and stir fry until they begin to soften, about 3 to minutes.
  • Add bell pepper, squash, zucchini, and garlic to the work. Stir fry until they reach your desired doneness, about 5 minutes.
  • Add pork back to the pan and stir fry sauce. Stir to incorporate. Saute until warm.
  • Season to taste with soy sauce, additional stir fry sauce, or salt and pepper.
