The backstory.

I've always liked having a few homemade freezer staples around, especially on busy weeks when cooking from scratch every night just isn't happening. These frozen meatballs started as a simple make ahead recipe I could pull out for quick pasta dinners, meatball subs, or easy appetizers when people stopped by. They're easy, dependable, and honestly one of those recipes I end up using more than I expect.

It's a must-make.

Frozen meatballs are one of those make ahead recipes that quietly save the day over and over again.

  • Dinner gets easier. Pull out exactly what you need and simmer them right in sauce for a fast weeknight meal.
  • They're tender and flavorful. The mix of ground beef, ground pork, parmesan cheese, onion soup mix, and Italian seasoning keeps every bite juicy and packed with flavor.
  • Perfect for more than pasta. These baked frozen meatballs work as a main dish, appetizer, meal prep protein, or party snack.
  • A healthier freezer staple. Homemade means you control the ingredients, plus they're naturally high protein and easy to adapt for different lifestyles.

Easy grab-and-go meals are my favorite! Eat these fresh the day of and then freeze the rest for a different meal later on. Make different sauces, use them in different recipes; the options are endless!

Let's talk texture and flavor.

These meatballs are rich, savory, and perfectly cozy with that classic Italian-style flavor everyone loves. The ground beef and ground pork create a tender texture that stays juicy even after freezing, while the parmesan cheese adds a salty richness and the onion soup mix brings big flavor without extra fuss. Once baked, the outside gets lightly golden while the inside stays soft and hearty - exactly what you want from a really good meatball.

What you'll need.

Here's what your going to need to make this easy frozen meatball recipe.

  • Ground beef (80/20): Adds rich flavor and hearty texture.
  • Ground pork: Keeps the meatballs extra tender and juicy.
  • Fresh white bread crumbs: Help bind everything together while keeping the texture soft. Low carb bread works great too.
  • Parmesan cheese (finely grated): Adds salty, savory flavor to every bite.
  • Egg: Helps hold the meatballs together.
  • Onion soup mix: The easy shortcut that brings tons of flavor. I use homemade Onion Soup Mix but you can use store-bought.
  • Italian seasoning: Gives the meatballs that classic cozy Italian-style taste.
  • Garlic powder: Adds a mellow garlic flavor throughout.
  • Kosher salt: Balances and enhances the flavors.
  • Ground black pepper: Adds just the right amount of warmth.

Looking for some fun ways to switch up your meatball routine throughout the week? Reuben Casserole With Meatballs turns cozy comfort food into an easy, hearty dinner with savory meatballs, tangy sauerkraut, and melty cheese layered together in the best way. For something a little extra cozy and crowd-pleasing, Cheese Stuffed Baked Meatball Recipe delivers that gooey cheesy center that makes dinner feel just a little more fun - especially with pasta, tucked into sandwiches, or served as an easy appetizer for game day or gatherings.

Customize it your way.

If you're learning how to make frozen meatballs, this is where the fun starts. These meatballs are easy to tweak depending on what sounds good that day.

  • Add chopped fresh parsley or basil for extra fresh flavor.
  • Swap marinara for barbecue sauce or sweet chili sauce for a different vibe.
  • Stir in crushed red pepper flakes or chipotle powder if you like a little heat.
  • Use mozzarella instead of parmesan cheese for a softer cheesy flavor.
  • Make mini meatballs for party appetizers or game day snacks. Add sautéed onions for even more savory flavor.
  • Substitute with your preferred ground meats such as turkey, chicken, or lamb instead of ground beef and pork.

Flexible dietary swaps.

Frozen meatballs are super adaptable, which makes them perfect for different dietary needs without losing that cozy homemade flavor.

  • Gluten-Free: Use gluten-free bread crumbs or gluten-free bread in place of regular bread crumbs.
  • Low Carb: Use low carb or keto bread instead of white bread crumbs.
  • Lower Sodium: Use a lower sodium onion soup mix and reduce added salt if needed.

How to make frozen meatballs from scratch.

Frozen meatballs are easy to prep ahead and even easier to cook straight from the freezer later on.

  1. Mix the meat mixture until everything is evenly combined but not overworked.
  2. Roll into evenly sized meatballs and place them on a lined baking sheet so they cook evenly.
  3. Bake until cooked through and lightly golden on the outside.
  4. Let the meatballs cool, then freeze them in a single layer before transferring to a freezer-safe bag or container.
  5. When ready to use, simmer the frozen meatballs directly in your favorite sauce until heated through.

How to enjoy them.

Frozen meatballs are one of the most versatile freezer staples to keep on hand because there are so many delicious ways to serve them.

  • Toss them into marinara sauce and serve over spaghetti or zucchini noodles.
  • Pile them into toasted hoagie rolls with melted mozzarella for meatball sandwiches.
  • Serve them as an appetizer with toothpicks and warm sauce for parties.
  • Add them to soups for an easy protein boost.
  • Pair them with roasted veggies or a salad for a simple high protein dinner.
  • Toss them into meal prep bowls with rice, quinoa, or cauliflower rice.

Kori's tips.

  • Don't overmix. Mixing too much can make meatballs dense instead of tender.
  • Use a cookie scoop. It keeps the meatballs evenly sized so they bake consistently.
  • Freeze in a single layer first. This prevents the meatballs from sticking together in the freezer bag.
  • Simmer gently. When reheating frozen meatballs in sauce, keep the heat low so they stay juicy.
