I know I might be a little partial to my own dessert recipe, but I’ve had many people taste test and they all say, “this is the best crème brulee recipe!” Here’s why they love it:

Pretty Little Tasty Desserts

Crème brulee tastes amazing and is beautiful. There is something special about receiving your very own pretty little dish! The crème brulee has a custard consistency, so it is creamy but not too rich. It is just so good.

Crème Brulee is Fun to Make

Wow your guests with your impressive blow torch abilities! LOL.

For the longest time I did not bother with a kitchen blow torch. In fact, it’s totally fine to use the broiler setting of your oven. The thing is, using a blow torch is so much fun! I used my husband’s blow torch from the garage once – not joking!

The hilarious part is that my husband was the one who wanted to melt the sugar with his blow torch. Apparently, he thought this was fun too and now we fight over who will use the blow torch! 😊

Ultimate Comfort Food Recipe

Crème brulee is the ultimate comfort food. This was the first dessert I made for my husband. I wanted to impress him with my cooking skills, but I didn’t let on how easy this dessert is. All he could think is that I was WOW, she’s making me a fancy French dessert!

The combination of pumpkin, pumpkin spices, and bourbon make this an extra cozy dessert you will love.

So, this is my Fall and holiday take on crème brulee. Nothing says Fall like pumpkins – so why not create a pumpkin spice and bourbon crème brulee!

Easy Low Carb Dessert

One of the best things about crème brulee is that it is easy to make and uses only a few ingredients. You can also make this in advance, so if you are having company over or a party for the holidays – this dish will be ready to do.

A lot of people are watching their carbs these days, so this is a great way to have a low carb dessert but not sacrifice taste.

I also love that crème brulee is different from your “normal” desserts – cake, cookies, and pie. It makes a nice change for the holidays!

Healthy Creme Brulee Recipe

This is dish is made healthy in that no added sugar is used. Monk fruit is substituted instead. With 22.3 g of fat, 5.6 g net carbs, and 6 g protein, crème brulee makes a great keto dessert.

The 5.6 g net carbs could be reduced to 3.1 g net carbs if you used 1/2 cup pumpkin instead of 3/4 cup as the recipe currently calls for. Unfortunately this will reduce the pumpkin flavor, but it will still taste good!

What You'll Need

Creme Brulee Ingredients

  • Heavy cream
  • Pumpkin puree (Try the Thrive organic pumpkin brand - it's a really good price (sale below) and tastes great!)
  • Egg yolks
  • Pumpkin spice
  • Bourbon
  • Vanilla
  • Granulated monk fruit sweetener (This is my favorite brand! Order from Thrive Market and get 25% off)

Tools

  • Stand mixer (this is my favorite brand and it comes in many colors)
  • Spatula
  • 13 x 9 pan (My favorite brand of bakeware! Well made and last forever)
  • 6 ramekins (these are the cute 5" ramekins used in this post!)
  • 2 prep bowls (I used these for separating the eggs. These make great prep bowls and they have lids!)
  • Saucepan
  • Measuring spoons
  • Measuring cups
  • Kitchen blow torch (optional – you can also use your oven broiler)

Instructions

Here's how to make this keto pumpkin creme brulee recipe:

Prepare and assemble ingredients

Preheat oven to 300 degrees F. Separate yolks from the whites and set aside. Assemble the rest of your ingredients

Heat Heavy Cream

In a saucepan over medium low heat, heat heavy cream until hot but not boiling – stirring frequently. Turn off and move on to next step.

Mix Ingredients With Mixer

Using an electric mixer, mix sugar, pumpkin puree, egg yolks, and pumpkin spice until just combined.

While mixer is on low speed, slowly pour hot heavy cream into pumpkin mixture. Mix until combined. Add vanilla and bourbon.

Important tip! Do not pour hot heavy cream too fast or your eggs will scramble!

Fill Ramekins With Pumpkin Mixture and Bake

Pour mixture into ramekins until almost full.

Set ramekins in the bottom of a 13 x 9 pan and fill the baking pan with boiling water until the level reaches halfway up the side of the ramekins.

Keto Creme Brulee (Pumpkin Spice Creme Brulee)

Carefully carry pan to oven and bake approximately 35 minutes or until the crème brulee is set.

Important tip! Do not accidentally pour hot water into the ramekins - or you will have slushy creme brulee.

Remove creme brulee from the water allow to cool to room temperature

Keto Creme Brulee (Pumpkin Spice Creme Brulee)

Refrigerate

Refrigerate for at least 2 hours until set

You can refrigerate creme brulee up to 3 to 4 days before you serve.

Serve

Remove crème brulee from the refrigerator at least 30 minutes prior to serving.

Sprinkle sugar over the top evenly. Using a small kitchen blow torch, or your oven broiler, melt the sugar and allow to caramelize (be careful not to burn).

Serve immediately

What is Crème Brûlée?

Crème Brulee is a classic French dessert that is very similar to custard. Crème brulee is made using small ramekin dishes then baked in a water bath until set, then cooled and refrigerated.

When ready to serve, a layer of sugar is sprinkled over the top and then melted either using a small kitchen torch or by broiling in the oven. The melted sugar creates a hardened caramel top. The crème brulee is then immediately served.

How Do you Pronounce Crème Brûlée?

Crème Brûlée is prounounced "krem-brew-lay". Don't you love my non-grammatically correct way of explaining? 🙂

How Do You Make Creme Brulee?

Mixed ingredients are poured into ramekins and baked in a water bath until mixture is set. Crème brulee is then cooked and then refrigerated until ready for serving.

Prior to serving, sugar is sprinkled over the top and then melted and browned with a kitchen torch or by broiling in the oven. This recipe uses pumpkin, pumpkin spice, and bourbon for a unique spin on the classic.

Important tip! Do not pour hot heavy cream too fast or your eggs will scramble!
Decorating tip! It's extra pretty with a dollop of fresh whipped cream and a spinkle of pumpkin pie spice with a mint leaf.
