Preheat oven to 400 degrees F. Remove pork chops from the refrigerator about 30 minutes prior to cooking.
Brush pork chops with olive oil and place in a plastic bag. Add shake and bake seasoning to the bag, close and then toss to coat.
In an ovenproof skillet over medium-high heat sear pork chops for 3 minutes per side.
Place pan directly in the oven. Bake for 20 to 25 minutes or until internal temperature reaches 140 degrees in the center. Remove from the oven and tent with foil. Let rest 5 to 10 minutes. Note: the temperature will reach the USDA's recommended temperature of 145 degrees while resting.
