This Reuben casserole is so delicious, baked with sauerkraut, tender meatballs, thousand islands, and melted Swiss cheese. This is a family favorite in our house. Bonus: it's gluten-free, low-carb, keto, and high-protein!
Preheat oven to 350 degrees. Grease the bottom of a 12" cast-iron skillet with olive oil or butter.
In a large mixing bowl, add all the meatball ingredients and stir together until combined. Divide mixture into 22 to 24 meatballs and place in your oven-proof skillet.
Bake at 350 degrees for 20 minutes.
While the meatballs are baking, mix thousand island, cream of mushroom soup, and caraway seeds together in a small bowl.
Remove the meatballs from the oven and sprinkle sauerkraut over the top. Using a spatula spread the soup mixture over the top then top with shredded swiss cheese.
Place casserole back in the oven and bake until cheese is melted and bubbly, about 15 minutes.
