This corn salad is made SUPER EASY using frozen corn. Sweet corn, fresh veggies, and a wonderful creamy tangy dressing tossed with cheese - yes, please!
4cupsfrozen sweet corn(or, 5 medium ears corn, husks removed and corn cut off)
1largetomato(about 8 ounces, cut into ½" cubes)
1mediumgreen bell pepper(chopped ¼" pieces)
½cupred onion(chopped)
2green onions(sliced)
1jalapeno (finely chopped)
½cupfresh cilantro leaves(chopped)
Dressing
½cupmayonnaise
½cupsour cream
¾cupcotija cheese(crumbled)
½teaspooncumin
juice of ½ a lime(add extra to taste)
½teaspoongarlic
1teaspoonsalt
½teaspoonground black pepper
Instructions
Cook frozen corn according to package instructions. Crisp tender corn has the best taste so cook a little less than recommended and test doneness. Drain any excess liquid from the corn and let it cool completely.
Add all salad ingredients to a large bowl.
Add salad dressing ingredients to a medium sized bowl and mix. Pour over salad and toss together.
Refrigerate a minimum of 1 hour. Adjust seasonings to taste and serve.

VARIATIONS: Add fresh jalapeño if you want to add spice.
TOP TIPS: Adjust any seasoning to taste. Allow salad to sit a minimum of 1 hour so that the flavors can blend. If the salad is too sweet add more lime juice.
