Learn how to grill filet mignon for a perfectly seasoned, juicy medium rare steak every time. This easy grilled filet mignon recipe is simple, high protein, low carb, and full of rich, beefy flavor.
1 to 2 days prior to grilling, rub the steaks with olive oil then generously sprinkle all sides with kosher salt and pepper. Wrap in plastic and refrigerate.
30 to 45 minutes prior to grilling, remove the filet mignon from the fridge to and bring to room temperature.
Grease the grill grates. Preheat grill to 425℉. Create 2 zones, one side of the grill over direct heat (burners on or charcoals underneath) and the other half with indirect heat (no burners on or no charcoal underneath).
Place the steaks onto the grill over direct heat. Cover and sear for 2 minutes on each side.
Transfer the steaks to indirect heat. Cover and grill for 3 to 4 minutes on each side. Remove as soon as the steaks turn 130 degrees in the center.
Set the steaks on a plate to rest and cover with foil. Let rest for 10 minutes. The temperature of the steaks will continue to rise another 5 degrees or so - resulting in a perfect medium rare temperature.

TIPS: Use an instant-read thermometer to test doneness. Removing the steak at the exact temperature is a key element to the success of your steak. After grilling filet mignon, be sure to let the steaks rest before serving. Season with salt and pepper several days before grilling. Remove the steaks from the fridge at least 45 minutes prior to grilling - you need them at room temperature before they hit the heat.
