½cupbrown sugar or a sugar free substitute(I used a gold allulose)
½cuprice wine vinegar
1pintblueberries(picked over, stems removed)
1tablespoontobasco sauce
1teaspoonsalt
½teaspoonpepper
Instructions
Heat olive oil in a sauce pot over medium heat and saute onions and jalapeno until translucent.
Add remaining ingredients, reduce heat to low and bring to a very gentle simmer. Adjusting heat if needed, continue to cook until reduced and thickened, about 25 to 30 minutes. Be sure to stir the sauce frequently!
Remove from heat and let cool slightly. Transfer to a blender and puree until smooth. (Tip: cover the blender with a dish towel to prevent any splatters)

VARIATIONS: Substitute other berries for the blueberries, sweetener may need to be adjusted slightly. Make it spicier by adding more jalapeno or hot sauce.
