In a large skillet over medium heat melt butter. Add onion then saute until very soft.
Add garlic and saute for 1 minute.
Add half-and-half, salt, pepper, and nutmeg. Bring to a simmer, adjusting heat if needed. Simmer until liquid is reduced by half.
Reduce heat to medium-low. Add cream cheese and incorporate into the sauce until melted.
Add spinach a little at a time and cook, stirring continuously until wilted.
Add mozzarella and parmesan cheese. Stir until combined and melted.
Adjust seasoning if needed.
