A delicious creamy seafood pasta salad that can be made 2 ways - with pasta or without. This seafood salad has been a favorite in our house for many years. If you are following a gluten free, low carb, and keto diet you will love the tasty pasta free version!
Cook pasta according to package instructions. If using cauliflower, place in a microwave-safe dish with ¼ cup water, cover, and steam 3 minutes or until crisp-tender.
Drain pasta (or cauliflower) and rinse with cold water.
In a large mixing bowl, add all ingredients. Stir until combined.
Cover and refrigerate for a minimum of 2 hours. Enjoy!

TOP TIP: If using cauliflower, only cook to crisp tender. If the florets are too soft, they'll fall apart in the salad.
SUBSTITUTIONS: Feel free to substitute lump crab meat instead of imitation crab. Use fat free sour cream and mayo to lower the fat in this recipe. To make it low carb and keto use cauliflower and a sugar free french dressing.
SERVING SUGGESTION: Serve on its own over a bed of lettuce and a slice of melon. Also makes a great side dish to steak and grilled seafood. Delicious for lunch or a light dinner.
