A delicious vodka martini that tastes just like fresh pineapple - slightly sweet and a little tart. No sugar is added and it's lower in calories than most martini's that use liqueur!
¼ to ½lemon (cut into wedges, squeezed; add to taste)
Instructions
Add ice, both vodka, pineapple juice, syrup, and fresh lemon juice to the cocktail shaker.
Cover and shake well until chilled.
Using a cocktail strainer, pour liquid into a martini glass and adjust ingredients to your liking.
Garnish with fresh pineapple or a twist of lemon peel.

SUBSTITUTIONS: You may substitute a different flavored vodka to create your own martini combinations! You can substitute pineapple juice for fresh puree but it won't have the same fresh taste.
TOP TIPS: Adjust any ingredients to your tastes (whether sweet or alcohol). If you can find fresh ingredients for puree, your flavor will be much more vibrant than a frozen product.
Simple Syrup
Add 1/2 cup water and 1/2 cup sugar substitute (with a 1:1 sugar ratio) to a small saucepan.
Heat on low stirring frequently until sugar is dissolved.
Remove from heat and let cool.
Refrigerate in an airtight container for up to 2 weeks.
NOTE: Some sugar substitutes don't need heat and dissolve. Stir yours into the water first to check and see!
Pineapple Puree
This makes approximately 9 ounces of fresh pineapple juice. You are welcome to half this recipe or freeze what you don't use.
In a blender, add 10 ounces of fresh pineapple and 2 ounces of water (4 tablespoons).
Blend until smooth.
Strain over a medium mixing bowl to catch any remaining solids.
