This French country skillet chicken dinner is a tasty one-pan recipe the whole family will love! With tender chicken, sauteed vegetables, in a creamy herbs sauce, this is destined to become the new favorite. (p.s. This recipe is low carb, keto-friendly, gluten-free, and sugar-free.)
½teaspoonoptional thickener: xanthan gum or 2 tablespoons flour(xanthan gum is the low carb option)
Instructions
1. In a 12" skillet, melt butter over medium-high heat. Add chicken to the pan and cook for 6 minutes. Turn chicken after 3 to 4 minutes or when it begins to brown. Remove chicken, cover, and keep warm.
2. Add leeks to skillet and saute until tender. Add mushrooms, zucchini, and garlic, sauteing until tender. Add spinach and saute until wilted. Reduce heat to medium-low and add the chicken back to the pan.
3. Whisk chicken broth, cream, salt, pepper, herbs de Provence, and xanthan gum (or flour) together in a small bowl.
4. Pour over chicken. Bring to a simmer (reducing heat if necessary) and cook for 10 more minutes, or until liquid is reduced and thickened. Stir frequently to prevent sticking.
Kori's Tips
If, after simmering for 10 minutes, the sauce mixture is still too runny, remove the chicken and set aside. Continue simmering the sauce until the liquid is reduced, about 3 to 4 more minutes. Add chicken back to the pan and enjoy!
You can add ½ cup sour cream if you want more creaminess, too! You will have to adjust your salt and pepper to taste.
