Cook the cauliflower florets by boiling or in the microwave.
Saute onion and spinach in olive oil until tender.
Add cauliflower and ham. Warm if needed.
Set aside some cheese for the topping. Add the dairy, herbs, and seasoning. Mix and transfer to a casserole dish.
Sprinkle the remaining grated cheese and top with crumbs (breadcrumbs or ground pork rinds.)
Serve and enjoy! Goes great with a fresh salad.
