These artichoke and spinach egg bites are packed with protein and all the creamy, cheesy flavors of your favorite dip. Perfect for breakfast, meal prep, or snacking.
¾cupfinely chopped artichoke heartsvery well drained
Instructions
Preheat oven to 325°F. Grease a 12-cup muffin tin with nonstick spray or use nonstick silicone liners.
Add egg whites, cottage cheese, mozzarella, spinach, parmesan, garlic powder, onion powder, salt, and pepper to a blender. Blend until smooth.
Divide the chopped artichokes evenly among the muffin cups. Pour the blended egg mixture over the artichokes, dividing it evenly between the cups.
Bake 22 to 25 minutes or until the centers are set and the tops are lightly golden. Cool 5 minutes before removing from the pan.
