Soft, chewy, naturally sweet salted caramel medjool date protein balls made with simple, wholesome ingredients and a boost of protein. These no-bake bites taste like dessert but fuel like a snack.
1cupMedjool dates(pitted; about 10 to 12 large dates)
¾cupgluten free old fashioned oats
¼cupfinely chopped pecans, toasted
½cupvanilla protein powder
2tablespoonsalmond butter or peanut butter
1tablespoonhoney or maple syrup
1teaspoonvanilla extract
½teaspoonsea salt
2 to 3tablespoonswarm water
Instructions
Add Medjool dates to a food processor and pulse until a sticky paste forms.
Add almond flour, oats, pecans, protein powder, almond butter, maple syrup, vanilla extract, and sea salt. Blend until the mixture starts to clump together. Add warm water one tablespoon at a time as needed.
Scoop and roll into bite-sized balls, about 1 tablespoon each. (Optional: drizzle with softened nut butter and a sprinkle of sea salt.) Chill for 10 to 15 minutes if desired, or serve immediately.
