Optional for serving:¼ cup chopped roasted pistachios; 2 tablespoons pistachio butter, warmed for drizzling; fresh berries such as raspberries
Instructions
In a large bowl, whisk together oats, chia seeds, almond milk, Greek yogurt, pistachio butter, maple syrup, vanilla extract, almond extract, and salt until combined.
Transfer to a covered bowl or divide mixture among four jars or containers. Cover and refrigerate at least 4 hours or overnight.
Before serving, stir the oats. Adjust consistency with milk if needed, and sweeten as desired. Top with chopped pistachios, raspberries, and a drizzle of pistachio butter.
