1poundleftover cooked lamb (cut into bite size pieces)
¾cupfrozen sweet peas
4cupsfrozen tater tots(thawed)
Instructions
Preheat oven to 400°F.
Preheat olive oil in a large skillet over medium-high heat. Add onion and carrots and saute until tender, about 6 to 7 minutes.
Add garlic and tomato paste to the skillet and saute for 3 minutes.
Stir in broth, worcestershire, beer, thyme, rosemary, salt, and pepper. Bring to a boil then reduce heat to a simmer. Continue to simmer until liquid reduces by about 20% and thickens, approximately 10 minutes.
Stir in lamb and peas then transfer to a casserole dish that has been sprayed with nonstick spray.
Top the pie with a single layer of thawed tater tots.
Bake for 35 to 40 minutes until tots are golden brown and casserole is bubbly. (Note: for even more golden brown and crispy tots, place the casserole under a broiler for a few minutes until you get the desired color)

VARIATION: To make this keto: make a cauliflower mash with cream and butter and spread over the top like you would with traditional mashed potatoes. Use beef stock or a low-carb beer instead of stout beer. Omit the peas completely or substitute chopped green beans.
TOP TIPS: Make sure to use thawed taters tots. It's super important that they are thawed or they will not cook all the way through.
SERVING SUGGESTIONS: Serve with a side salad or a favorite steamed or roasted vegetable.
