Instant pot chicken fajitas are a tasty and easy-to-make recipe that's perfect for busy weeknights. Bonus! Make the Instant Pot Mexican rice recipe with the leftover juices in the pot - so good!
2cupsjuices from the pot + water to make up the difference

Instructions
Fajitas
In a large bowl, season chicken, peppers, and onion with fajita seasoning. (set aside 1 tablespoon fajita seasoning for later). Stir until mixed.
Add water to the Instant Pot, then place a rack on the bottom of the pot. Place chicken, peppers, and onions on the rack. Secure lid and pressure cook on high for 4 minutes.
Once done, quick release the steam. Remove chicken and vegetables and place in a bowl.
Optional: if making rice, see instructions below and start now.
Sprinkle chicken and vegetables with the remaining fajita seasoning and adjust salt and pepper to taste. Cover and keep warm.
Serve fajitas on flour tortillas with lettuce, shredded cheese, diced tomato, and any other favorite toppings. Serve rice on the side.
Mexican Rice
Add the rice to the liquid in the bottom of the pot. Select Saute High setting. Bring to a simmer, stirring occasionally.
As soon as the rice begins to simmer, turn the pot off, add salsa, and let sit for 5 minutes or until liquid is absorbed and rice is tender. Season with salt and pepper to taste.

VARIATIONS: Substitute mushrooms or even zucchini in place of any vegetable you don't like. Skip the rice or make the Mexican rice with riced cauliflower (see Question section within the post)
