You'll love this easy copycat Chipotle barbacoa recipe - cook it in your crockpot (the easiest way) or a dutch oven. The beef is so tender and has a wonderful smoky mildly spicy kick.
1chipotle pepper in adobo sauce(1 for mild, 2 or more for spicy)
½cupbeef broth
3tablespoonsapple cider vinegar
juice of 1 lime
4teaspoonsminced garlic
2teaspoonsdried oregano
1teaspoonground cumin
½teaspoonground cloves
1teaspoonkosher salt
½teaspoonground black pepper
1(3-pound)beef chuck roast
1mediumonion(chopped)
2bay leaves
Instructions
Add the first 10 ingredients to a blender and blend until smooth.
Place onions on the bottom of a slow cooker, then top with chuck roast. Pour the chipotle sauce over the top, then add bay leaves.
Cover and cook on low for 8 to 10 hours or until the roast pulls apart easily.
Remove the roast from the juices and shred with two forks. Add the shredded beef back to the pot juices and stir together. Adjust seasoning to taste.
