This sausage peppers and onions recipe is a quick and easy one-pan meal! Sauteed sausage with colorful and tender veggies, and Cajun seasoning, topped with sour cream and cheese - it makes a wonderfully simple weeknight meal! Serve it on its own, wrapped in tortillas, or with rice.
1(12-ounce)package kielbasa, smoked pork sausage, or cajun sausage(cut into ½" thick slices)
4bell peppers(any color, sliced)
1large onion(thinly sliced)
2teaspoonsCajun seasoning
¼cupsour cream
¼cupcheddar cheese(shredded)
Instructions
Preheat a 12" skillet with 1 tablespoon olive oil then sauté sausage until browned. Remove from skillet and set aside.
Add remaining 3 tablespoons olive oil, onions, and peppers to the skillet and sauté until desired tenderness is reached.
Add sausage back to the skillet and toss to warm. Stir in Cajun seasoning. Adjust seasoning as needed.
Serve and top with sour cream and cheese.

VARIATIONS: Make it spicy by adding a favorite hot sauce. Add and cook shrimp with the sausage.
SUBSTITUTIONS: Don't like cajun seasoning? Substitute a salted taco seasoning, creole, lemon pepper, or any favorite. Can't have dairy? Omit sour cream and cheese.
TOP TIPS: Buy pre-cooked sausage from the store so you only have to brown. Some sausage comes raw and will need to cook according to the package instructions.
SERVING SUGGESTION: Top with diced tomatoes and sliced avocado. Also good with a simple green salad or over steamed riced cauliflower.
