These broccoli cheddar cottage cheese egg bites are fluffy, cheesy, and packed with protein. Made with egg whites, cottage cheese, broccoli, and sharp cheddar, they're an easy make-ahead breakfast that's perfect for meal prep.
Preheat oven to 350°F. Lightly coat a 12-cup muffin tin with cooking spray.
Add the egg whites, cottage cheese, broccoli, Parmesan, garlic powder, onion powder, salt, and pepper to a blender. Blend until smooth with tiny green flecks throughout.
Divide the cheddar cheese and green onions evenly among the muffin cups. Pour the broccoli egg mixture evenly over the cheddar and green onions, filling each muffin cup nearly to the top.
Bake for 22 to 26 minutes, or until the centers are just set. Cool for 5 minutes before removing from the pan.
