Saute the vegetables in a skillet until tender.
Add shrimp, scallops, and crab to the skillet. Saute just until the shrimp turn pink.
Sit in sour cream, some of the enchilada sauce, and seasoning.
Fill each tortilla with seafood mixture, queso fresco, and jack cheese.
Roll each tortilla, leaving the ends open. Place in casserole dish seam side down. Cover with remaining enchilada sauce and cheese.
Cover with foil and bake 30 minutes. Remove foil and bake an additional 15 minutes until bubbly.
