Buttery Cauliflower Mashed Potatoes

Delicious copycat for  mashed potatoes - maybe better? Easy to make.  Make ahead and reheat! Low carb and keto.

Head of Cauliflower Unsalted Butter Sour Cream Garlic Powder Salt Pepper Optional: grated cheese, chives, and crumbled bacon.

Microwave cauliflower until VERY tender.

COOK CAULIFLOWER

Step 1

Place cauliflower and butter in a food processor and blend on high speed until smooth

PUREE/MASH

Step 2

Transfer to a bowl and stir in the remaining ingredients. (Can also add before mashing.)

ADD REMAINING INGREDIENTS

Step 3

Warm if needed. Adjust salt & pepper. Top with grated cheese, chives, and even bacon.
