Add onions, zucchini and oil to an oven safe skillet. Add spinach and wilt.
Add in the chicken and ham to the skillet and toss until warm then turn off the heat.
Add sour cream, cream cheese, Dijon, lemon juice, thyme, salt and pepper and one cup of cheese.
Add remaining cheese to the top and bake in the oven until the cheese is melted and bubbly.
Serve fresh out of the skillet. Garnish with fresh herbs if desired. The perfect all in one meal!
