Saute vegetables in butter until some browning is achieved.
Turn the Instant Pot off and add the chicken.
Add all remaining ingredients to the Instant Pot.
Secure the lid. Pressure cook on high. Quick release the pressure.
Remove bay leaf. Adjust salt, pepper, and add more fresh dill if desired. Serve with crackers or crusty bread. Enjoy!
