Only a few simple ingredients. Easy tender roasted lamb. Use boneless or semi-boneless. Roast vegetables with the roast.
Lamb Roast Minced Garlic Olive Oil Kosher Salt Dried or Fresh Herbs (Oregano, Chives, Thyme, Parsley) Optional baby potatoes and carrots for roasting.
Preheat oven. Remove lamb from the fridge 30 minutes before roasting.
Brush with olive oil and rub garlic, salt, pepper, and herbs all over.
Roast in the oven until desired doneness is reached. Determine doneness with an instant-read thermometer.
Tent the lamb with foil and let rest for about 15 minutes before serving.
Slice the lamb and enjoy! Season with salt & pepper to taste.
