Craving a pepperoni pizza fast? Try low carb and keto tasty pepperoni pizza eggs! This recipe is incredibly good and what I make every time I’m craving melted cheese and pizza. You will not miss the crust – I promise!
1 tablespoon olive oil
1/8 teaspoon salt
1/4 teaspoon italian seasoning
1–2 tablespoons of pizza sauce (if on a keto diet, make sure it is sugar free)
1/4 cup mozzarella cheese (whole milk), grated
5 to 6 slices of pepperoni
Assemble all of your ingredients in advance.
Using an 8″ cast iron skillet (or other ovenproof pan), heat olive oil over medium heat.
Set your oven to broil.
Wisk eggs, salt, dash of pepper, and italian seasoning in a bowl.
Pour mixture into hot pan and cook until eggs start to set (approximately 2 minutes).
Life the edges of eggs to loosen, then flip eggs over. Immediately turn heat off, then top with marinara, mozzarella cheese, and pepperoni.
Place pan under broiler for 1 to 2 minutes until cheese is bubbly (be careful not to burn)
